So, to prepare such a soup, cold water is poured into the pan, which must be brought to a boil. Further, the heat is reduced to medium and the already washed rice is poured into the pan.

While the rice is cooking, you need to prepare the rest of the vegetables. To do this, cut ginger, onions and carrots into small squares.

Raw potatoes must be rinsed in water, then peeled and cut into small cubes, and then immediately sent to the rice pot. The soup will now cook for about 15-20 minutes.

The next step is to lightly fry the onion with ginger root and carrots together until half cooked. In this case, the ready-made soup dressing will be added to the dish about 10 minutes before it. full readiness.

So, at the end, 3-5 minutes before the soup is fully cooked. You need to put in it canned corn and celery, as well as pepper and salt to your liking. If desired, you can add any spices to the dish.

  3. Boil the broth until tender - it can be 1.5-2 hours (depending on the quality of the meat).
  4. Remove the meat from the broth and cut it into cubes.
  5. Cook the soup in the broth, and put the meat in a saucepan five minutes before it is cooked.

The meat broth will make a delicious rice soup with beef. You can change the recipe a little and take veal instead of beef. It cooks faster, and the soup will turn out to be more dietary.

Chicken Rice Soup

The soup that is prepared on chicken broth... The main thing in this dish is not to buy chicken that is too fatty or to remove the skin from it before cooking. Also add onions and carrots to chicken broth. If you like celery, then add it too - this root will give the rice soup an unusual aroma and taste.

It is not necessary to cook rice soup in meat broth, as suggested in the previous two recipes. Tasty soup can be boiled in vegetable broth or served with meat additives.

Rice soup with meatballs

An alternative to rice soup with meat or chicken broth can be the same dish, but with additions in the form of meatballs. How to cook such a soup, read on.

  1. Pass 300 g of beef through a meat grinder, add 1 egg to the minced meat and salt. Roll small meatballs with wet hands.
  2. Dip chopped potatoes (300 g) into boiling water (2 L) and cook for five minutes.

Prepare children's rice soup according to the recipe described above. Only instead of ground beef use minced meat chicken fillet and don't sprinkle it with spices that kids might not like.

Lean rice soup is an absolutely everyday dish, but no less tasty for that. This is the first soup that my mother taught me to cook. Much time has passed since then, but this soup is still a frequent guest on our table. Over the years, I learned to experiment with products and to the basic ingredients - rice, potatoes, onions and carrots - I began to add mushrooms, zucchini, green beans, green pea or fresh corn.

Peel the potatoes and cut them into medium cubes.

Add washed rice, salt and black pepper to the potatoes.

IMPORTANT! I always boil water in an electric kettle before I start making soups, I prefer to pour boiling water over vegetables after cutting, this way I save my time. You can just first boil water in a saucepan and then put potatoes and rice in it.

Fill our vegetables with 1.5 liters of boiling water. We put the pan on the fire, let the water boil again and reduce the heat to medium. Cook the soup for 15 minutes, until the potatoes and rice are fully cooked.

In the meantime, prepare the fry for the lean rice soup. For this, the bow and bell pepper cut small cube, and grate the carrots on a medium grater.

We put the pan on the fire. Pouring into it vegetable oil and let the oil warm up. After that, put the vegetables in the pan and fry them for 5-7 minutes until soft. Now let's add green peas, you can also take it frozen.

Add the tomatoes, cut into slices, or tomato puree... If your tomatoes are not very bright in color and not rich in taste, add a little tomato paste, half a teaspoon will suffice. We cook the frying for another 5-7 minutes after boiling.

We try potatoes and rice for readiness. As soon as they are ready, add frying to the soup. Let the soup boil again. We try the soup again with salt, add salt if necessary.

Add finely chopped parsley to the soup and remove from heat.

Pour the lean rice soup into portioned bowls and serve.
