Mannik with apples on kefir without eggs. Mannik with apples, aka charlotte with semolina

Olya, a regular reader of the site, again advised me to bake something new - charlotte with semolina!

The recipe interested me so much that, although the time for apples and apple charlottes in the fall, I specially bought apples and decided to cook a manna with apples now, in winter.

The result exceeded all expectations. With a bite, you will be thrilled and learn this recipe to bake over and over again! The pie is amazingly fluffy, the dough crumbles in your hands and melts in your mouth. And also there are many, many apples. Delightful!

A delicious manna with apples can be cooked with kefir or sour cream, and if there are no apples (out of season), add pears, raisins, cherries, apricots to the dough! And if you add cocoa, you get a chocolate manna!

Ingredients:

  • 1 glass of semolina;
  • 1 cup flour;
  • 1 glass of sugar (as small as possible);
  • 1 glass of kefir (I replaced kefir with 4 tablespoons of sour cream and half a glass of milk);
  • 100-125 g butter;
  • 1 teaspoon of baking soda (extinguish with vinegar);
  • 1 kg of apples (I took 5 large ones).

How to cook apple manna without eggs:

Wash apples, peel and cut into not very large slices.

Fill the semolina with kefir for half an hour (I filled it with milk).

We combine the manna-kefir mixture, sugar, melted margarine (I also added sour cream, but if you bake with kefir, then you do not need to add sour cream).

Add flour, pour soda into it and extinguish, mix again.

Pour apples into the dough and stir again.

Lubricate the form (pan) with butter, sprinkle with semolina. If the mold is silicone and this is not the first time you bake in it, you do not need to lubricate.

We spread the dough and spread with a spoon.

The cake is baked at about 180C for 1 hour. We try for readiness with a wooden stick.

Cutting the edges of the pie with a knife, gently turn it over onto the lid of a large saucepan, and from the lid onto a dish - so the delicate apple manna won't break.

Enjoy your tea with one of the best apple pies!

Have you ever tried adding to dough semolina- instead of flour or together with flour? Try it! And the result of the culinary experience will delight you. Because you will not get an ordinary cake or cupcake, but a delicate manna that melts in your mouth!

Products for Mannik on kefir with apples

How to cook manna on kefir with apples:

We measure the products in the same 200g glasses.

Pour the semolina with kefir, mix and leave for half an hour.

In the meantime, let's prepare the apples: wash them, clean them of cores with partitions and seeds, but you don't have to remove the skin. Then cut the apples into small slices or pieces.

Pour semolina with kefir

Let's prepare the apples

I took 7 medium sized apples. Peeled - 500-600 g, but you can put in the dough and more, up to 1 kg. Mannik cannot be spoiled with apples, like porridge with butter! It is better to choose apples of hard sweet and sour varieties, moderately juicy - Antonovka, Simerenko.

The semolina has absorbed kefir - it's time to knead the dough! Pour sugar into a bowl with semolina.

Melt butter and pour into a bowl, stir.

Then add flour to the dough. It is better to sift it - then the baking turns out to be fluffier and more tender.

We make a depression in the flour and pour soda there, extinguish lemon juice or vinegar, and immediately mix the dough thoroughly until smooth.

Pour sugar into a bowl with semolina

Pour in melted butter

Add flour and slaked soda

Pour the apples into the dough and mix again so that they are evenly distributed. If it seems to you that there are a lot of apples - do not worry, this is the secret of the taste of apple manna.

Prepare a baking dish: grease the bottom and sides with a piece of softened butter, and then sprinkle with semolina. It is important to grease and sprinkle the pan thoroughly so that there are no “islands” left for the cake to stick to.

Mix the apples and the resulting dough and transfer to the mold.

As for the form - you can use a form with a hole, as in the photo, or a silicone, or even just a cast-iron pan. You can bake one large manna - or small semolina muffins in silicone molds.
Tasty in any case, the baking time will differ: small muffins will be baked in 50-55 minutes; manna in a wide form with low sides is baked for about 1 hour, in a high one with a hole - about an hour and a half.

We put the mold with manna in the oven, preheated to 180C, and bake until a dry wooden stick (when the dough is sampled in the highest place) and a ruddy top.

Mannik on kefir with apples

We take the finished manna out of the oven and let stand in the form for 10-15 minutes. It smells amazing, and you can't wait to try, but if you hurry to shake the hot cake out of the mold, it can break and crumble.

To make it easier to get the cake, you can gently pry it around the edges with a knife - although if the form is well oiled, shaking out the manna is easy. Cover the dish with a dish, turn it over, lightly slap the bottom with your palm - and a pie on a platter!

Mannik on kefir with apples

Fresh pie is very tiny, it crumbles in your hands, so you need a very sharp knife to cut it. Better yet, just break off the portions and enjoy homemade apple cakes!

Mannik with apples is delicious both warm and cold. And if you like the recipe and want to experiment, add pears or cherries instead of apples, pieces of apricot or peach. And every time you will have new pie for tea!
