Festive classic herring salad under a vegetable coat.

  • 2 small herrings (or 1 large)
  • 500 g potatoes
  • 500 g carrots
  • 500 g beets
  • 100 g onions
  • 4 eggs
  • 250 g mayonnaise
  • salt

From this list of ingredients, you get a large dish of herring under a fur coat, just for a party in the company. If you cook on weekdays, you can cut the amount of ingredients in half.
It is advisable to take the herring for the recipe with a regular barrel (from a saline solution). If you use a ready-made herring fillet in oil, then, in my opinion, the taste of the finished dish is significantly deteriorated due to oil and spices.
In many regions of the post-Soviet space, a fur coat is prepared not with eggs, but with apples. I still prefer a fur coat with eggs, in my opinion, it tastes softer. If you decide to cook with apples, simply replace the layer of eggs with a layer of grated apples.

Preparation:

Boil the beets in a saucepan for 1-2 hours (depending on the variety and size of the beets). Cool down.

Boil potatoes and carrots in salted water for 30-40 minutes (the knife should easily pierce vegetables). Cool down.

Boil the eggs for 10 minutes after boiling. Cool with cold water.

We butcher the herring.
Cut off the head of the herring, cut along the belly, clean out the insides.
Rinse the herring thoroughly inside and out.
Next, make a cut on the back, cutting out the upper fin at the same time.
Next, evenly grabbing the skin from the head, gently pull and remove the skin like a glove up to the tail (as in the photo). Then in the same way from the other side.
Then cut out all the fins and tail.

Carefully view and remove any remaining rib bones (as shown), as well as any bones you can find.

Cut the herring fillet into small pieces.

Peel potatoes, grate on a medium grater.

Peel the eggs, grate on a medium grater.

Peel the carrots, grate on a medium grater.

Peel the beets, grate on a medium grater.

Peel the onion, chop finely, put in a container.
Pour boiling water over, drain the water after a couple of minutes (this is done so that the onion does not taste bitter and becomes less spicy).

Take a large flat dish (I have a dish with an inner diameter of 20 cm) or take two smaller plates, then you get two fur coats.
If you have mayonnaise in a bag, cut off a very small corner of the bag. If the mayonnaise is in a jar, then put it in a bag and cut off a small corner in the same way.
We begin to lay out the ingredients on the dish.
Put the potatoes, salt, and evenly pour with mayonnaise (I didn't spread the mayonnaise with a spoon so as not to crush the layers, then the fur coat turns out to be more delicate and airy).

Put pieces of herring, pour with mayonnaise.

Although this is easy to explain, firstly, there are months ahead of them, rich in holidays and today's recipe will definitely come in handy, and secondly, I prepared it for the New Year (as, incidentally, in the past, and the year before last, and in ... years 😉) and therefore I have fresh photos, fresh reviews and fresh comments on the recipe.

I advise today's article not only to novice hostesses, but also to experienced ones, since I myself, having prepared a fur coat for the hundredth time and going to make it in the 101st, read a way to make it even tastier. At the same time, the herring under a fur coat has retained the classic recipe and layers, the sequence of which has remained the same as we like.

As always, I will first give a short cooking recipe, and in step-by-step I will describe in detail what needs to be done additionally.

We need:

  • Carrots - 1 pc.
  • Onion - 1 small
  • Eggs - 3 pcs. (1 of them for decoration)
  • Mayonnaise
  • Black pepper
  • Vegetable oil

A short recipe for cooking

Boil beets, potatoes, carrots and eggs, cool, peel. Peel the herring and cut into small cubes. Finely chop the onion.

Put in a salad bowl in layers: potatoes, herring, onions, carrots, eggs, beets. Coat with mayonnaise. I repeat the layers one more time.

How to cook a herring under a fur coat, a step by step recipe with a photo

If you take such a ratio of products as written by me, then the "fur coat" will have a slightly sweetish aftertaste due to the rather large amount of beets (but we love that). If you take less beets and more potatoes - the sweetness will go away, try it to your liking.

Boil vegetables (except onions) over low heat: cook carrots for about half an hour, potatoes for 45 minutes, beets for an hour and a half, depending on size. At the same time, do not forget that

We put the vegetables in boiling water, because we need them to be tasty, and not the water in which the vegetables are boiled.

We cooked everything, set it to cool.

During this time, we will prepare the herring. The last times I tried to do it with already cut and boneless, packed in a vacuum, I must say it is also good, especially since the herring in these packages is already with salt and vinegar, that is, delicious.

This time I bought a 300 gram Matthias fillet, it turned out to be just as much as needed. Cut the fillet into small squares.

Peel and rub the vegetables on a coarse grater. It is most convenient to make this salad in a salad bowl with high sides, but it just so happened that I put everything in a herring maker, placing a fur coat in it is another task, but what can I do just like that for me a traditional herring under a fur coat))

Now about what I would like to draw special attention to.

Several years ago, I came across an advice that grated vegetables should be salted and added with a little sunflower oil. I tried it and, indeed, it turned out to be tastier, at least for this New Year, the herring under a fur coat was eaten one of the first.

To do this, grate potatoes into a separate plate, salt them, pepper a little and add a little, somewhere with an incomplete tablespoon, odorless vegetable oil.

Mix gently with a fork (so as not to spoil the "airiness").

I taste it, if something seems small, I add it.

We also add a little salt and sunflower oil to the beets.

I just pepper the carrots a little.

If the herring is not "matias", but whole fish, it is not too salty, I would say that for this salad it is even tasteless, so by cutting the herring into pieces, you can add a little sunflower oil and a little vinegar.

The question that is most often asked when preparing a fur coat is about layers. Herring under a fur coat, its classic recipe, has layers arranged in the following sequence: - herring; - onion; potatoes; carrot; - beets, in this version over the herring you get a "fur coat" so "fur coat", real.

But at this point I step back from the recipe, try it, maybe you will also like it more.


Now coat with mayonnaise on top. The next day, it remains only to bring beauty. You can cut vegetable flowers and leaves, you can sprinkle with fresh herbs, I decorate with a grated egg.

What else I want to add. I suggested making a salad “Herring under a fur coat » the classic version, in which the recipe is with an egg, but often it is prepared without eggs, while absolutely without compromising the taste. So do not like eggs - feel free to remove them from the recipe. I tried to cook this way, but returned to the usual version, I personally like it more.

The sectional view of a fur coat may not be the most aesthetic, but bright, colorful and appetizing.

And further. I tried the most delicious "fur coat" from a work colleague, and the secret of the "taste" was not in the products and not in their special arrangement, but in the fact that when chopping vegetables she used a hand grater, in my opinion, from Mulinex. I rubbed it directly into the salad bowl, the layers turned out to be more voluminous, fluffy and soaked better. So if you have a similar device in your arsenal, be sure to use it.

"Herring under a fur coat" is a regular at our New Year's table along with "Olivier", although sometimes not the most festive dishes like eggs stuffed with onions are present on it (everyone loves them, but it's easy and quick for me to cook 😉 in the photo they can be seen in the corner). your attention if you are thinking of what appetizer to prepare for your dinner or lunch today.

This salad is one of the three hits that most often decorate modern holiday tables. Each housewife prepares herring in her own way under a fur coat. The culinary specialists endlessly change and improve the classic recipe, trying to find the ideal option for themselves.

This recipe includes fish fillets and vegetables. No additional ingredients are used in its preparation. By the way, it is the classic salad that gourmets love most of all. Having created a vegetable "coat" over the fish, you should always let the dish steep well in the cold so that all layers are saturated with the sauce.

Ingredients

From the products taken: large fat herring, 2 medium beets, a large carrot, 2 pinches of fine salt, a table egg, a little vinegar, an onion, 4 potatoes, a large amount of mayonnaise without additives.

It is very important to choose a whole salted herring for a snack. In this case, the hostess herself will be able to choose a large beautiful fish. Dressed foods in jars are sprinkled with a lot of vinegar and contain harmful preservatives. When used, the taste of the salad will deteriorate significantly.

Cooking method

  1. First of all, all the vegetables from the recipe are boiled until soft. Once the food has cooled, it needs to be peeled. The egg is also cooked until tender.
  2. All prepared foods, except for herring and onions, are rubbed using a coarse grater.
  3. The first layer of the snack is half of the grated potatoes, salted and covered with a net of mayonnaise.
  4. The second layer will be a medium-sized herring cut. Do not grind too small, otherwise the taste of the fish will not be in the appetizer. A mesh of mayonnaise is created again, but the salt is no longer used.
  5. Next, there are the following layers of salad: onion cubes, a little sprinkled with table vinegar - carrots - mayonnaise - remaining potatoes - beets - mayonnaise - grated egg. Some of them add salt to taste.

You can decorate the snack with flowers cut from vegetables.

With the addition of apples

This variation of the classic appetizer will allow you to prepare the most juicy and tender dish. Ingredients: 420 g of herring fillet (preferably a barrel fillet), 2 carrots, a large onion, 3 potatoes, a sour apple, 2 tablespoons eggs, salt, a pinch of sugar, small. a spoonful of balsamic vinegar, mayonnaise. How such an original herring is prepared under a fur coat is described in detail below.

  1. It is advisable to cook vegetables and eggs in advance. For example, in the evening. Over the past time, they will have time to cool well, and will not crumble during grinding.
  2. Onions should not only be cut into small cubes, but also pickled. To do this, its pieces are poured with a mixture of balsamic vinegar, salt and sugar. Loose components are added by a small pinch. Let the onion sit in the resulting marinade for a few minutes.
  3. The first layer of the snack will be coarsely grated potatoes. It is well coated with mayonnaise and salted.
  4. Pickled onions are distributed on top.

Diet option without mayonnaise

Few people know that there is even a dietary version of the salad in question. Of course, it is prepared without mayonnaise and potatoes. Ingredients: salted herring, 420 g of low-fat sour cream, 2 onions, 2 carrots, 3 beets, 60-70 g of mustard, 10 g of apple cider vinegar, 5 table eggs, salt, a mixture of colored peppers.

  1. If the onion is too bitter, you should first cut it into cubes, and then pour boiling water over it and leave it for a couple of minutes. Then, at the same time, it is poured with apple cider vinegar.
  2. Beets and carrots are washed and wrapped tightly in foil, after which they are baked in the oven for 35-45 minutes. This cooking method (as opposed to cooking) will keep all the vitamins in the vegetables.
  3. The finished products, softened inside, are crushed with a grater.
  4. Hard-boiled eggs also rub coarsely.
  5. The herring is removed from the skin and cut into neat pieces.
  6. For dressing, sour cream, salt and mustard are combined.
  7. The appetizer is laid out in layers in the following sequence: beets - pieces of fish - grated eggs - carrots - pieces of fish - eggs - pieces of fish - beets. After each new vegetable, a layer of pickled onions is laid out.
  8. Layers are added to taste and coated with sour cream sauce.

The appetizer is infused for a couple of hours in the cold.

Lazy herring under a fur coat

This recipe will help you finish your snack very quickly. Ingredients: large slightly salted herring, large beet, 3 potatoes, carrot, onion, mayonnaise, salt, seasonings to taste.

  1. All prepared vegetables are boiled until tender, right in the peel. When the food has cooled slightly, you can cut it into small cubes.
  2. The herring is peeled from the skin and entrails. Also gets rid of the head and tail. Cut into small slices.
  3. All prepared ingredients are combined in a deep salad bowl. They are dressed with mayonnaise mixed with salt and spices.

To serve the salad beautifully, use a serving ring. By the way, you can make it yourself from a tin can.

How to make a roll?

This is an ideal design for a familiar salad for a festive table. In this form, it looks much more interesting and appetizing than ordinary layers. Ingredients: 450 g salted fish fillet, large red beet, 5 table eggs, 3 potato tubers, 5 large carrots, homemade mayonnaise, salt. How to prepare a salad step by step in the form of a roll is described below.

  1. In general, a salad is prepared in this form according to the same scheme as the classic version. First of all, all vegetables are boiled or baked in foil in the oven until soft. When the food has cooled down, they rub on the grater with the largest divisions. By the way, potatoes and carrots can be cooked together, but beets must be cooked separately. Eggs are boiled at the same time.
  2. Finished testicles are cut into small cubes.
  3. Fillet of salted herring is coarsely cut into cubes or cubes.
  4. A cling film is laid on a cutting board. It is best to make two layers at once. Especially if the material is not too dense.
  5. The beets are scattered on the film and compacted. From above, it is covered with another layer of material and kneaded. Then the film is removed, and the beets are smeared with mayonnaise and added.

How to prepare a salad and how to serve it?

If an appetizer is being prepared in the form of a roll, then it should be served on a beautiful oval dish. A large amount of finely chopped greens are scattered over the salad.

The usual layered version of the salad should be laid out and served in a transparent bowl, which will allow you to admire the mouth-watering ingredients. If you plan to put a snack on a flat dish, then you should use a culinary ring for this purpose. All layers are formed right inside it and compacted, and after the dish has cooled, the ring is carefully removed.

How to decorate a herring under a fur coat?

Most often, vegetable flowers are used to decorate the discussed salad. They are collected from slices of beets, carrots or apples, and then supplemented with fresh herbs.

Of course, you can also make the decoration of the snacks themed. For example, for the new year, it is important to lay out a Christmas tree made of chopped greens on its surface. A light background of grated egg will make the picture stand out. The Christmas tree will be decorated with "toys" made of vegetable pieces and halves of cherry tomatoes.

Similar thematic drawings can be created for any other holiday. For example, the numbers for the birthday, March 8 and February 23. The main thing is to include imagination.

Heat the gelatin slightly, add to the beetroot mass and beat it again.

Cut the herring into small cubes. Use metal rings to cut round slices out of the bread. Leave the bread in the tins and place the herring on top of it. Pour in the beetroot mass and refrigerate for an hour. Garnish with lemon slices and basil leaves.

To make it more convenient to eat, pierce an unusual snack with skewers or put it on slices of black bread.

Ingredients

  • 1 beet;
  • 3 potatoes;
  • salt to taste;
  • 1 fillet of salted herring;
  • ½ onion;
  • a few sprigs of dill;
  • 1 teaspoon lemon juice
  • 1 teaspoon olive oil
  • a handful of sesame seeds;
  • a few sprigs of parsley.

Preparation

Boil the beets and potatoes until tender. Grate the beets with a fine grater and squeeze. Dry boiled potatoes a little and turn into mashed potatoes. Mix and salt the vegetables.

Chop the herring and onion into small cubes and mix with the chopped dill. Use the vegetable puree to make small flatbreads. Place the fish mixture in the middle of each and form into strawberries by joining the edges.

Lubricate them with a mixture of lemon juice and oil. Make berry seeds from sesame seeds, and leaves from parsley.


Another original performance of a familiar dish.

Ingredients

  • 1-2 carrots;
  • 3-4 beets;
  • 150 g cream cheese;
  • salt to taste;
  • 9 rectangular slices of black bread;
  • some vegetable oil;
  • 1 salted herring;
  • 1 red onion;

Preparation

Boil carrots and beets, cool and peel. Along with the cream cheese, puree the vegetables with a blender until smooth. Salt as desired.

Place the puree in a piping bag and refrigerate while you cook the tartlets.

To do this, cut off the crust of each piece of bread. Grease a muffin pan with butter and place the bread firmly in the bottom of each cavity. Place in an oven preheated to 200 ° C for 10 minutes. Cool the finished tartlets and remove them from the mold.

Vegetarian salad with seaweed and Adyghe cheese.

Ingredients

  • 3-4 potatoes;
  • 2-3 carrots;
  • 2 beets;
  • 400 g of seaweed;
  • salt to taste;

  • 200 g of Adyghe cheese;
  • a few tablespoons of mayonnaise (if you don't eat eggs, use lean mayonnaise).

Preparation

Boil potatoes, carrots and beets. Cool vegetables, peel and grate on a coarse grater. Add salt, pepper, oil to each vegetable, as well as to seaweed and mix. Grate the Adyghe cheese on a coarse grater.

Lay out the potatoes in the first layer. Lubricate it with mayonnaise. Then spread the seaweed, cheese, mayonnaise, carrots and mayonnaise again. Put the beets on top and cover them with mayonnaise too.

Put the prepared salad in the refrigerator for a couple of hours.

You no longer have to wait 2-4 hours for the salad to infuse - this recipe will allow you to serve a juicy "fur coat" to the table in just 30-60 minutes, and, if necessary, immediately after cooking.

  • No, we are not proposing radical changes to the recipe. The secret is only to mix the mayonnaise with each ingredient separately, and not at the time of laying the salad in layers, as we usually do. As a result, you will get the same classic herring under a fur coat, only faster.

Ingredients (for 3-4 servings):

  • Beets - 1 pc.;

  • Egg - 1-2 pcs. ( needed rather for decoration);
  • Mayonnaise - to taste ( about half a glass);
  • Onion - 1/2 small onion ( about 50 g.);
  • Herring - 1 pc. ( can be replaced with herring in oil 150-200 g.).

  1. Boil beets, carrots, potatoes and eggs until tender, then cool. It is best to do this in the evening. All vegetables must be cooked in their uniforms.
  • Beets are cooked from 35 minutes to 2 hours, depending on the size of the tubers. How to tell if beets are cooked? Pierce it with a knife. If the blade goes through the skin easily, then it's time to get the vegetable. However, it is best not to boil the beets for salad, but to bake them in foil for 20-25 minutes at 190 degrees. So you can save time and avoid staining the pan.
