5. While the dough is cooling, let's prepare the apple filling for the shortbread pie. To do this, peel and seed the apples and cut into small, not too thin slices.

Advice! For this cake, it is advisable to use strong sweet and sour apples with dense pulp, otherwise, when stewing, they can turn into porridge.


6. Put the apples in a saucepan, sprinkle with spices, pour over the apple juice and put on a low heat. If you don't have apple juice on hand, you can replace it with plain water.
7. Simmer the apples for 10 minutes under the lid, then add sugar, mix gently and cook for another 5 minutes.

8. Dissolve the potato or cornstarch in lemon juice, add to the apples and cook for another 3 minutes.

9. The result should be a thick filling like apple jam with tangible apple pieces inside. The filling should be cooled in the refrigerator for 10-15 minutes.

Advice! You can bake a shortcrust cake with apples not only with fresh fruits. In order to speed up and simplify the process of making this pie, use 400 g of ready-made apple jam or jam for the filling. Tasty and aromatic can be easily prepared at home by yourself during the harvest season, so that later you can bake all kinds of pies from it, and even in the cold season.

10. Roll out the cooled dough on a lightly floured surface into a layer 5 - 7 mm thick.

11. Gently wrap the rolled dough on a rolling pin and transfer to the mold, making small sides. I had a tart pan with corrugated sides, 25 cm in diameter. There is no need to lubricate the tart pan, as the shortcrust pastry contains a sufficient amount of oil.

12. Spread the apple filling evenly on the dough.

13. Remove the smaller part of the dough from the freezer and grate on a coarse grater directly over the apple filling. Smooth the surface of the cake and sprinkle with breadcrumbs.
