Ingredients

  • Medium potatoes - 4 pieces.
  • Chicken egg - 4 pieces.
  • Fresh cucumber (medium) -2-3 pieces.
  • Boiled sausage - 350-400 grams.
  • Radish -200 grams.

  • Salt, black pepper (freshly ground) - to taste
  • Mustard - 1 tablespoon (hot or tender)
  • Kefir (fat content 0.5-1%) - about 1 liter
  • Mineral water - 1 liter.

Preparation

It is necessary to boil potatoes (in their uniforms) and eggs. We wash it, fill it with cold water, and put the pan on the fire.
Chop the green onion finely and crush it with a spoon in a bowl of salt. Pour into a saucepan.

We cut the boiled sausage into cubes, put it in a saucepan (it is better to take a dairy or a doctor's, but if someone is an opponent of sausage, then you can take boiled lean meat, or tongue). A separate word about slicing - the smaller, the tastier, but do not overdo it, otherwise you will get porridge instead of okroshka.

Mine, cut the cucumber into cubes, send it to the onion and sausage (be sure to check the cucumber for bitterness, otherwise you will ruin the dish).

Cut the radish into semicircles, or into slices, pour into a saucepan.

Pour boiled potatoes and eggs with cold water, cool. We clean and cut the potatoes into cubes, put them in a saucepan.

Clean and cut the egg into cubes, pour it into a saucepan (you can crush the egg with a fork).

Salt okroshka, pepper and mix. Pour chopped herbs (dill, parsley).

Fill up to half of the pan with kefir.

Add 1 tablespoon of mustard (if the mustard is spicy, then okroshka will turn out to be a little spicy).

Add mineral water to the top (you can also dilute it with whey, but if you like okroshka thicker, then you can just take 0.5% kefir without diluting anything further).
You can not immediately season okroshka with kefir, but store it dry in the refrigerator and season it immediately before serving. And then it can be stored for up to two days (in a seasoned form, onions, cucumbers and radishes will give their juice, and on the second day okroshka may not be so tasty). But we have okroshka pots of any capacity for a maximum of a day, so this problem is not relevant in our family.
Stir, try - add what is missing. If there is little sourness, add lemon juice... You can put the pan into the refrigerator, so that okroshka on kefir with mineral water is a little infused and cooled. But usually, while you are cooking, you cannot wait for the moment when okroshka is ready.
If you have homemade eggs, vegetables and herbs from the garden, something tastier and healthier than dishes it is simply impossible to imagine. Considering also the fact that you can't spoil okroshka with greens - I sprinkle a lot of dill and parsley, because when else, if not in summer, to stock up on vitamins!

  • boiled potatoes - 4-5 medium tubers;
  • hard-boiled egg - 2 pcs;
  • radish - 10-12 pcs;
  • fresh cucumbers- 2 pcs;
  • dill, parsley - 0.5 small bunch;
  • green onions - 4-5 shoots;
  • kefir of any fat content - 500 ml;
  • highly carbonated mineral water - 1 glass;
  • salt to taste.

How to cook okroshka on kefir with mineral water

Young potatoes can be boiled in a peel and then peeled, or before cooking, scrape the tubers with a knife - the skin is still thin, it is removed very easily. Cook until tender (soft) in moderately salted water. Simultaneously boil eggs for 8-10 minutes from the beginning of the boil of water. Cool the potatoes and eggs, wash the radishes and cucumbers, rinse the herbs.

Cut the cooled potatoes into not very small cubes. Pour into a bowl or saucepan.

Cut the eggs into smaller pieces, chop the parsley leaves, dill. Cut the green onion shoots together with the white part - so the okroshka will taste sharper and there will be more vitamins. But if you don't like it, add only green feathers, cut into rings.

Rub the radish through a coarse grater. For cucumbers, the skin can be removed in whole or in part, we also rub the cucumbers on a grater with large holes. Add to the rest of the ingredients.

Stir, add some salt. Fill okroshka with chilled kefir (it is better to take low-fat - it is not so high in calories and more liquid).

We dilute with cold mineral water. Mix again, adjust the density if it turns out that okroshka turned out to be thick. Straighten with salt.

We remove okroshka to infuse and gain taste for at least half an hour - during this time the vegetables will be saturated with kefir, and the greens will give off their taste and aroma. Bon Appetit!

Boil the potatoes in their uniforms, let them cool and peel them.
Dice the potatoes and place them in a large bowl or saucepan.
Ham or boiled sausage also cut into cubes. You can use cervelat instead of ham. You can take chicken, veal, pork, in principle, almost any meat is suitable.
Transfer the sausage to the potato bowl.

Now let's deal with cucumbers: cut half of the cucumbers small cube, can be pre-peeled. And rub the remaining half on a grater. Thus, we get a good, pleasant consistency and thickness of okroshka, and additional juiciness and tenderness. Transfer the cucumbers to a bowl.
Rub the radish on a coarse grater. You can take more radishes, it gives juiciness and piquancy to okroshka, but again, be guided by your taste and how spicy your radish is.
We also transfer the radishes to the bowl with the vegetables.

Finely chop the dill and green onions.
Add a good pinch of salt to the remaining greens and remember a little with our hands so that the green onions, and the dill, give us some of their juice.
Add herbs to a bowl with vegetables.
And also add boiled chopped eggs to okroshka.

Mix everything well. Add salt and freshly ground pepper to taste.
And finally, we mix cold kefir with cold sparkling or mineral water. Instead of mineral water, you can simply take clean filtered or boiled water.
And we fill our vegetables with diluted kefir.
Mix everything and okroshka is ready. Season it to taste with salt and pepper, if you want, you can add a little acid, to taste, for example lemon juice or a little vinegar, if your taste asks for such sourness.

Pour okroshka into plates and sprinkle with herbs when serving.
Delicious summer okroshka is ready!
