If you have a high-speed blender at your disposal, then use it, otherwise you can handle it with an ordinary knife. However, in our case, it turned out that a cutting board paired with a special knife is ideal for chopping butter and flour.

The technology for making crackers is different from the kneading technology shortcrust pastry only by the presence of cheese in the composition, otherwise the same rules should be followed: all components and the necessary equipment must be cold. Ideally, place cold butter, water, and a knife in the freezer 10 minutes before cooking.

Turn the butter and flour into small crumbs. If the cheese is not salty enough, then add a pinch of salt to the flour at this stage. You can add your favorite dried herbs and spices.

Add your favorite hard cheese to the butter crumbs, after rubbing it finely. Chop all the ingredients together again.

Transfer the crumb to a work surface and add ice water, no more than a couple of tablespoons. It will help you combine the ingredients.

Wrap the dough cling film and refrigerate for 20 minutes.

Roll out the rested dough into a layer about 3 mm thick. Use a knife or a special cookie cutter to cut out the crackers.

Discard any excess dough, gather it together, roll it out and cut it again. Repeat until you have used up all the dough.

Spread the crackers on a parchment-lined baking sheet and bake at 170 ° C for 12-15 minutes.

Ingredients:

  • 120 g flour;
  • 200 g hard cheese;
  • 2 tablespoons of cold water;
  • 60 g butter.

Preparation

  1. Use a knife to crumble the flour and butter.
  2. Add cheese and chop all ingredients again.
  3. Pour in cold water and collect the dough in a lump. Wrap it in plastic wrap and refrigerate for 20 minutes.
  4. Roll out the dough into a 3 mm thick layer and cut.
  5. Bake the crackers at 170 ° C for 12-15 minutes.

I say in advance, I have never tried to do with other cheese, only with hard varieties. In this recipe, I used the remnants of three cheeses.

We take softened oil. It is not necessary to heat it, but to take it at room temperature, soft.

Three cheese on a fine grater. This time I had the pieces, put them in a blender and grinded them perfectly into crumbs.

Combine everything in a bowl.


And now we rub everything thoroughly with our fingers, getting a sort of crumbs. Rake from below, grind, there should be no separate "islands" - no flour, no butter, no cheese.



I always roll it straight out on baking paper. In this case, everything is very easy to transfer to a baking sheet.
Roll out thinly, the dough should be 2-3 millimeters thick, not thicker at all!

Turn on the oven in parallel, it should be heated to one hundred and eighty degrees.

Transfer the dough to a baking sheet and cut in portions. I do this with a pizza knife.

And now you can salt them a little. Just on top, over the entire area, a little. Personally, despite a large number of cheese, salt is needed there.

We put in the oven for about seven to ten minutes (do not forget, it must be well heated!). The time depends on the thickness of the dough and the specific properties of your oven.

You can sprinkle them with caraway seeds, poppy seeds, sesame seeds, any dry herbs - here you already want to use it.

Whisk the cooled butter until soft and creamy.

Then add the pre-grated cheddar cheese and stir in the butter.

Add two tablespoons of ice water, stir and form a firm dough.

Wrap up ready dough in plastic wrap and refrigerate for one hour in the freezer.

Place the dough on parchment paper and roll out into a 4-5 mm thick layer.

Cut the rolled chilled dough into small squares or diamonds.

Use a regular toothpick to prick each figurine. To add a salty flavor, dissolve a small amount of salt in water and brush the surface of the crackers with a brush.

  • 300-400 g wheat flour

Preparation

1. To make crackers, prepare shortcrust pastry... Some cooks chop butter along with flour, and then only add the rest of the ingredients, but this process is very time consuming and tedious. It is much easier to simply melt the butter to room temperature in a water bath or in the microwave.

2. Then add 1/3 of wheat flour into it and knead a thin dough.

4. Add salt and finely grate the hard cheese directly into the container.

5. Stir everything, add the remaining flour and knead a firm shortbread dough.

6. Carefully distribute it on the board, or even better - immediately on parchment paper, forming a wide circle about 0.5 cm thick. Cut the cheese circle with a pizza knife into 8 pieces.

7. Poke small holes in each part with a straw to make your cracker look like a piece of cheese.

8. Bake dough pieces in the oven for about 20-25 minutes until golden brown - do not hold any more, as the cracker burns very quickly. Remove the baking sheet from the oven and let the hot pastry cool down so you can fully experience the cheese flavor in it.

Serve the crackers with a cup of flavorful.

1. The yolk from the protein is separated over two empty bowls. Firstly, in this way it will be possible to avoid the ingress of an unwanted component into the dough, and secondly, thanks to this, it will turn out visually and by smell to reveal not too much fresh egg before it spoils the rest of the food.
