Salted trout in pita bread. Lavash roll with trout

Step 1: Prepare the ingredients.

For cooking, you need to use trout, for other fish there are other recipes. First you need to rinse the fish with running water, and then place it on a cutting board, where we will clean it from scales with a sharp knife. To gut a fish, you need to cut off the head, tail and fins from the carcass. Then make an incision on the belly and remove the insides. We have a very accessible video on cutting trout on our website - here. While we are working on other ingredients, rub the fish inside and out with salt and black pepper so that it absorbs the aroma of spices.
Lemon, onion and herbs must be washed with running water to remove settled dust and dirt. We clean the onion from the husk and cut into half rings. Shake the bunch of cilantro to remove excess water and finely chop on a cutting board.
Lemon cut into thin half rings.

Step 2: Stuff pita bread with trout.

If you use several small trout carcasses, you can not chop them, and if one is large, then you should cut it into small portions. Let's spread the pita bread in front of us and proceed! To give the dish some creamy tint, grease pita bread with mayonnaise or sour cream. Closer to the edge of the pita bread, lay out a little filling - onion, lemon and cilantro. We stuff the fish with the same ingredients and put it on top. We sprinkle the trout with the rest of the filling so that it is completely surrounded by a kind of "marinade". All actions are clearly shown in the photo.
Gently and slowly, we begin to roll the pita bread into an envelope. Now it remains only to bake it, which we will do in the next step.

Step 3: We bake ishkhan in pita bread.

There are several ways pre-treatment an envelope of trout and pita bread. You can pre-fry it in a pan, you can wrap it in foil, or you can simply put it in a baking dish and pour it over melted butter. We will try the last method. Melt butter in a bowl or mug over medium heat, stirring occasionally. At the same time turn on the oven to heat it up up to 160 degrees. We put the pita roll with stuffed fish in a baking dish, which we pre-lubricate vegetable oil to prevent burning. Pour melted butter on top and send to the oven, where the dish will be baked for 30-40 minutes until ready.
