Strawberry liqueur- sweet, tasty, red. This is how you can describe this wonderful liqueur. The most famous representative (Ksu Ksu) is a German liqueur created in 1997 by Georg Hemmeter. The fame of the drink was brought by its unusual manufacturing technology: sugar is not used for production, and the strawberry content in it is more than 65%.

Classic strawberry liqueur recipe

Ingredients

    Vodka (alcohol, cognac) - 1 liter

    Ripe strawberries - 1 kg

    Sugar - 1 kg

    Water - 0.5 liters

Cooking method

    Sort fresh ripe strawberries, throwing out rotten fruits, wash well, remove the stalks. Cut the berries into two parts.

    Pour the processed strawberries into the regular glass jar or a bottle, pour vodka (other alcohol) and close the lid tightly. Alcohol should cover the layer of berries by at least 2-3 cm. During the infusion, the level of alcohol will decrease, this is normal.

    Put the jar in a sunny place (on the windowsill) and hold for 14-16 days.

    Strain the tincture through a sieve, then filter the liquid part through three layers of cheesecloth.

    Mix water and sugar in a saucepan. Bring the mixture to a boil and simmer for 3-5 minutes over low heat, removing the white foam. Then cool the syrup to room temperature.

    Mix the strawberry infusion and sugar syrup pour the resulting drink into bottles. Our strawberry liqueur is almost ready, to improve the taste it remains to let it brew.

    Transfer the drink to a dark place at room temperature for 7 days. After aging, you can start tasting. Shelf life - up to 2 years.

XuXu Strawberry Liqueur Recipe

It is worth noting, I would like to say, that this recipe does not pretend to be the original recipe, which the manufacturer puts in his bottles. But the taste of the resulting liquor is very similar to the original.

Ingredients

    Strawberry - 0.5 kg

    Vodka or alcohol (up to 40-45%) - 0.5 l

    Sugar - 250-300 g

    Lemon - 1 pc.

    Water - 200 ml

Cooking method

    We wash the strawberries, remove the stalks and cut them in half (if the berries are large, then it can be cut into quarters).

    We fall asleep strawberries in liter jar and fill it with vodka or diluted. In this case, it is important that all the berries are covered with vodka. You can take more of it and pour it along the very edges of the can. We also add the juice of half a lemon to our infusion - it will give the drink a pleasant sourness.

    We send the bank for 7-10 days to the windowsill, preferably with the sun. Then the infusion must be carefully drained through cheesecloth, without squeezing the strawberries, and sugar must be added to the jar with berries. We cork the infusion and set it aside - we don't need it yet.

    The jar of strawberries and sugar must be gently shaken a couple of times and set aside for another 2-3 days until the sugar is completely dissolved. Drain the syrup, add 200 ml of water to the jar, mix and drain the remaining syrup again.

    Mix strawberry infusion with syrup, pour into a jar and forget about it for another 3-5 days. During this time, the liqueur will become lighter and it can be removed from the sediment and then filtered.

As a result, you should have a delicious liqueur of a beautiful "strawberry" color. Its strength will not exceed 15%, but the taste and aroma are simply divine. It is better to drink liqueur chilled.

Recipe for strawberry liqueur with schnapps or brandy

Ingredients

    Strawberries - 1.5 kg

    Schnapps or brandy - 1 l

    Sugar - 200 g

    Water - 200 ml

Cooking method

    Mash strawberries in a jar and pour alcohol over it for 10 days.

    Then you need to prepare a syrup from 200 g of sugar and 200 ml of water: dissolve the sugar in water, heat and stir until the sugar is completely dissolved.

    Cool the syrup and mix with the tincture.

    Pour the finished strawberry liqueur into clean bottles and seal tightly. Store in the refrigerator for no more than a year.

Ingredients

    Alcohol - 500 ml

    Water - 500 ml

    Sugar - 750 g

    Strawberries - 500 g

5. Mix water and sugar in a saucepan. Bring to a boil, simmer for 3-5 minutes over low heat, removing the white foam. Then cool the syrup to room temperature.

6. Mix strawberry infusion and cold sugar syrup. Pour the resulting drink into bottles. The liquor is almost ready, but aging is needed to improve the flavor.

7. Transfer the container for 7 days to a dark place with room temperature. After aging, you can taste it.

Liqueur XuXu, offered by the German corporation Georg Hemmeter, has become the embodiment of all girlish dreams. The first batch was presented to the public in 1997. This did not happen spontaneously - the recipe borrowed from the bartenders (strawberry puree with vodka) had been refined for 6 years!

The corporation's lab technicians were striving for an all-natural recipe suitable for frau weight watchers, as well as for people who had the misfortune of suffering from diabetes. The result was an annual consumption of 2.5-3 million liters of liquor.

XuXu, like other Georg Hemmeter spirits, is certified according to DIN EN ISO 9001 and IFS Food. Its quality was also confirmed by a high jury score at the World-Spirits Award, where the drink received gold with 96% of the votes.

Features of the liquor

Tasting indicators: concentrated, strawberry-lime, moderately sweet (without sugary) taste; slightly viscous consistency without impurities.

Ingredients: strawberry puree with fresh, ripe berries (66%); high quality vodka (33%); lime juice (1%), food coloring E129 (to add brightness and attractiveness to color).

Sugar and other sweeteners (as well as preservatives, stabilizers, and other artificial additives) are not included in the list of ingredients of the original Xu Xu; the sweetness of the drink is given by a large percentage of sweet berries in the composition.

Home cooking secrets

Liqueur XuXu is easily prepared at home, or rather a copy of it. However, there are some nuances that make it possible to bring the taste of imitation as close as possible to the original:

  • berries - you need to choose only ripe specimens of sweet varieties (and in no case watery);
  • vodka - only the best (you can take 45% alcohol or twice distilled and refined moonshine; rum, gin or brandy also make a wonderful drink - but not Ksu Ksu);
  • lime is easily replaced with lemon (if you are not a taster, you will not notice much difference);
  • unfortunately, usually you cannot do without sugar, but if you are categorically against it, do not put it;
  • homemade XuXu is stored for no more than a year.

Attention! will not turn out as bright as the branded XuXu, tk. We will not add dye to it. At the same time, the imitation is much more aromatic than the original.

Strawberry liqueur Ksu Ksu at home

  • strawberries - 1 kilo;
  • vodka - 1 liter;
  • lemon juice- with ¼ large fruit;
  • granulated sugar - from 1 tbsp. up to 1 kg (to taste) - usually take 0.3-0.5 kilos;
  • bottled water - 500 ml.

If you only have frozen strawberries or strawberries - use it and, believe me, nothing bad will happen - in the end, your product has the right to the author's "zest".

Sequencing:

  • Cut clean dry berries into 2-4 parts and transfer them to a glass container.
  • Pour in lemon juice and alcohol (should cover the strawberries). We put it in the sun for 15 days.
  • We filter the infusion.
  • Dissolve sugar in water, bring to a boil, cook for 7-10 minutes. Cool it down.
  • Combine syrup and strawberry nectar, set for weekly stabilization.
  • Pour Ksyu Ksyu into a suitable container.

A cool liqueur is obtained according to this recipe, if instead of the traditional XuXu vodka, you take light rum or brandy.

XuXu Strawberry Liqueur

This is another alternative version that brings us as close as possible to the factory technology for the production of the famous drink.

  • strawberries - 660 gr.;
  • vodka - 330 ml;
  • lime or lemon juice - 10 ml;
  • granulated sugar - 100 gr. (less or more).
  • We turn the berries into gruel and rub through a cheesecloth to separate them from the seeds.
  • Add sugar and citrus juice to the puree, knead and let stand for 15 minutes. During this time, the strawberry juice will partially dissolve the sugar.
  • Pour in vodka (and if you want - cognac, rum, schnapps, 40% alcohol, or even the most refined fruit moonshine), knead again.
  • We leave in a dark place for 2-3 weeks, shake and enjoy!

It is unacceptable to filter XuXu - it was originally conceived as a thick dessert digestif.

How to drink XuXu wisely

This liqueur, which does not have a high degree and sugary sweetness, is so easy to drink in its pure form that all recommendations for its use boil down only to pre-cooling the digestif to + 9- + 10 ° C and choosing suitable 30-gram glasses.

Strawberry alcohol usually does not require snacks.

The drink can be poured over desserts and ice cream, added to confectionery and fruit salads... Adding to alcohol will help to make alcohol as non-alcoholic and less thick as possible. strawberry juice... However, the most popular way to drink liquor is to create all kinds of mixes with it.

Cocktails with XuXu

Chip! Instead of ice (or with it), 2-3 frozen strawberries can be added to the glass with any cocktail described here.

Recipes for the simplest mixes with strawberry liqueur:

  • mix Ksyu Ksyu (50 ml) with champagne (100 ml), drip 1-2 dashes of lemon juice (you can do without it);
  • combine 100 ml of liqueur and fruit juice (soda, tonic, mineral water, milkshake without fillers);

Strawberry liqueur cocktails, in which the ingredients are combined by simple stirring:

  • Light: pounded with 1 tbsp. sugar 4 mint leaves, 50 ml of liqueur, 300 ml of sprite, ice (if you want something stronger, add 30 ml of white rum);
  • Strawberry Margarita: 30 ml tequila, 60 ml strawberry liqueur, juice of 1 lemon;
  • Pineapple Kiss: 50 ml each of liqueur, pineapple juice and sparkling wine
  • Strawberry daiquiri: 160 ml of strawberry vodka and 60 ml chocolate liqueur, molded ice (you can add 10-20 ml of light rum).

Using the shake method (in a shaker), you can mix:

  • Pitu Morango: 50 ml each of orange and grapefruit juices, 30 ml each of strawberry liqueur and;
  • Girl's dreams: 150 ml of liquor and 50 ml of Bianco martini.

Don't forget to add ice to the shaker!

XuXu liqueur in flaky shots is especially good, just lay in layers:

  • 20 ml of banana juice, liqueur and juice again ("Lovers");
  • 15 ml each strawberry syrup, Batida de Coco liqueur and strawberry liqueur ("Australian").

For the “Love is ..” cocktail you cannot do without a shaker. They have to beat: 1 banana, 2 mint leaves, 100 ml of strawberry liqueur and 50 ml each of 10% cream and banana juice.

The straw for this cocktail ensemble should be wide!

    Well, here comes the strawberry season. It is a pity that it lasts only three weeks, but you really want to prolong the taste of summer. So let's do it, but this time we won't make jam or freeze berries. Let's make the aromatic sweet strawberry liqueur Xu Xu at home. Such a liqueur is prepared simply, and its strength does not exceed 15%.
    We need fresh or frozen berries, sugar and vodka. It will take no more than 2 weeks to cook, although our active time will take a maximum of 30 minutes. Oh yes, the traditional German Xu Xu liqueur has a slight sourness thanks to lime juice, but you can also use lemon juice at home. From 0.5 kg of berries and 0.5 liters of vodka, we will get twice as much liqueur, so determine the amount of ingredients yourself, you may want to prepare more or less liqueur.

    By the way, the liqueur turns out to be very sweet and aromatic, so it is often used not only as a drink, but also poured over ice cream, added to baked goods or filling. It gives not only taste, but also a great aroma. And of course, if you are preparing desserts for children, then do not add it, even though it is relatively weak.

  • Vodka - 0.5 l
  • Sugar - 250 g

Step by step preparation of homemade strawberry liqueur with a photo:

Wash the strawberries well and let the water drain. We clean the berries from the stalks and put them in a liter jar.

Fill with vodka, add the juice of half a lemon, close the lid and send it to a sunny warm windowsill for 7-10 days.

It is important that the strawberries are completely covered with vodka.


  • Drain the resulting strawberry infusion through a fine sieve or cheesecloth. We pour it into a bottle with a lid and send it to the refrigerator. It will not be useful to us yet.
    We do not squeeze the berries, let them stay wet.

    We send the strawberries back to the jar and cover with sugar. Close with a lid and leave for another 2-3 days so that the sugar is completely dissolved. From time to time, the jar can be gently shaken, but do not stir with a spoon, so that the berries remain intact.


  • And when the sugar has dissolved, we drain the resulting syrup into the previously obtained strawberry infusion.

  • Add 200 ml of cold mineral or boiled water to the jar, shake it a couple of times and filter it again to completely drain the syrup.

  • Add the resulting sweet water to the strawberry infusion, cork the bottle with a lid and forget about our liquor for another 3-5 days, so that the sediment falls to the bottom and the liqueur can be filtered.

    The strawberry liqueur will now become lighter and more transparent.
    And what a taste! And the scent!

  • German liqueur XuXu (Xu Xu), like similar drinks, has its own characteristics of production and use. It has long been an integral part of popular cocktails.
