Minced meat roll: filling preparation

In this dish, the main taste is in the filling. If you have an onion, chop it finely and sauté in a few spoons butter. If green feathers, just finely chop them. Hard boil the eggs, peel and finely chop them into a bowl with an onion. Sprinkle with salt (a third of a spoon) and black pepper (a pinch). Add one and a half tablespoons of mayonnaise, knead the mixture well.

Excess moisture can be eliminated in another way - by adding breadcrumbs. We clean the onion and chop it in a blender (or finely chop). Add it to the mince. Salt and pepper, put the necessary spices. We turn on the oven. The most difficult moment comes - the formation of a loaf. On the baking sheet where the minced meat roll will be baked, put a clean towel. We spread the meat mass on it (it should be a bit dry), level it with a layer. Lubricate the minced meat with mayonnaise and lay out the filling. Sprinkle canned peas on top. We take the wide edge of the towel and begin to roll up the roll. We act very carefully so that the stuffing does not tear. We shift the loaf to a greased vegetable oil foil sheet. We also flavor the roll with oil with a silicone brush. With a knife, we draw shallow notches in the form of rhombuses on the top of the product.   • 1 tablespoon Khmeli-Suneli seasoning (if you don’t like very spicy, reduce);
  • 1-1.5 tablespoons of salt (if fine, take less, as this salt is more salty);
  • 5 tablespoons with a slide of mayonnaise;
  • a little freshly ground black pepper.

To decorate the roll: black peppercorns.

How to cook meatloaf

    We make the stuffing from eggs and green onions. green onion and boiled eggs finely cut, add 0.3 teaspoons of salt and black pepper, 1.5 tablespoons of mayonnaise and mix everything well.

If it’s chicken, then don’t even suffer - add a little crushed crackers or the pulp of a long loaf. Just don't overdo it, it's all the same meatloaf, not bread :)

    Finely chop the onion, or even better chop it in a blender. Add the onion to the minced meat, pour salt, spices there, mix everything well.

    Cooking meatloaf. Now the most interesting%) We put the oven to warm up, we ourselves take a sheet on which we will bake the roll, put a clean bag on the sheet. Put the stuffing for the roll on the bag and distribute it evenly. According to the indicated volume, minced meat occupies almost the entire bag.

    Lubricate the minced meat on top with the remaining mayonnaise and distribute the filling, sprinkle with green peas on top.

    We start rolling the roll. Grasp the edges of the bag from the side of the length of the bag (wide edge) and help with the bag, start rolling the roll. Do not hurry! Make the movements evenly so that the roll rolls equally from all sides.

    And so you roll until the last edge of the minced meat remains on the bag. Then, take the foil, put it on a sheet where there is no longer a bag and grease it with vegetable oil on top. Slightly lifting the bag with the roll, put it on the foil.

    Ready? Well done, we are already close to the goal! Now grease the top of the roll with vegetable oil. I use a silicone brush for these purposes - very convenient and hygienic! We take a knife and make longitudinal notches about 5 mm deep on the roll, first in one direction, then in the other. It turns out like an uneven diamond-shaped cell :) Put a pea of ​​black pepper on each cell and press it a little. Be sure to push it in a little, otherwise you will simply take it off later when you grease the meatloaf.

    We bake a roll. We slightly lift the edges of the foil and press it against the roll. We do this so that when juice flows from the roll, it soaks it, and does not spread over the tray.

    We put the roll in an oven heated to 175 degrees. We will cook it for about 1-1.5 hours. In the last 10 minutes, the fire can be added a little.

    Every 10-15 minutes, use a silicone brush to grease the roll with juice that will flow from the meat into the foil.

    Bend the foil a little so that the sides also blush.

How to check readiness?

Due to the fact that we watered the roll, it turned out to be an appetizing crust on top, and soft meat inside. Take a knitting needle and pierce the roll, juice should not flow from it and fresh minced meat should not remain on the knitting needle, in addition, it will become a very beautiful ruddy color.
