If you are going to bake it in a smaller form, reduce the amount of products by ¼ or half, depending on the size of your form. Only in it you need to lay out apples not in rows, but in concentric circles.



Ingredients:

  • butter - 280 g;
  • sugar - 200 g (1 cup);
  • large eggs - 4 pcs.;
  • sour cream 15% - 130 g;
  • flour - 320 g (approximately 2.5 cups with a volume of 200 g, because 130 g of flour is placed in 1 cup);
  • 15 g baking powder (3 teaspoons);
  • A pinch of salt;
  • A pinch of vanillin or a bag of vanilla sugar;
  • 4-5 large green apples (Simirenko, Snow Calvin, Granny Smith, Golden);
  • For sprinkling - 1-1.5 tablespoons of sugar, optionally - ¼ teaspoon of cinnamon.

How to bake:

Opinions are divided about this - which of the tasters claims that it is worth putting so much, and who, on the contrary, says that there is a lot of oil and this is noticeable. So, if you want to reduce the fat content of the cake, use less butter and more low-fat sour cream.

Prepare the form by lubricating its bottom and walls sunflower oil. And even better, first cover the form with parchment, and then grease the paper with oil. This will make it easier to get the cake out of the mold.



Take the butter out of the fridge ahead of time to soften it. And when it becomes soft, beat it with sugar with a mixer.



Carefully separate the whites from the yolks.



Add the yolks and sour cream to the butter mass and beat until fluffy and smooth.



Sift flour mixed with baking powder in 3-4 doses into the dough, mixing it.



That's what, quite thick, the dough so far turned out.



Now wash the whisks of the mixer very carefully so that there is no fat left on them, wipe and beat egg whites to a thick, lush foam that keeps its shape well - 3 minutes, gradually increasing the whipping speed from minimum to maximum.



For 3-4 calls, we mix the whipped proteins into the dough - gently, like in a biscuit.



The dough becomes less thick and very tender, fluffy, like a cream.



Pour into prepared pan and spread evenly with a spoon. Turn on the oven, let it warm up to 180C.



Wash the apples, cut into quarters, peel and core. Then we cut each quarter into three more parts, even slices.



Insert apple slices in even rows into the dough, close to each other.



Top the cake with a mixture of sugar and cinnamon or just sugar.



And put it in the oven on the middle level. Bake at 180C for about 45 minutes, possibly up to 1 hour - depending on your oven, the size of the pan and the height of the dough. When the wooden skewer remains dry when testing the dough, and the crust on the pie becomes ruddy, bright golden, it is ready. And so that the bottom does not burn while the dough is baking, you can put a mold or a pan with water on the bottom of the oven.



Take the pan out of the oven and let the cake cool down a bit. Then you can cut directly into the mold - carefully, the dough is very tiny and tender.

I took a larger form, square 30x28, ceramic, with a high side of 6 cm, so that I could cut the cake directly in it with a wooden spatula. If you have a standard round baking dish with a diameter of 23-24cm, the amount of ingredients will need to be reduced by a quarter. But it’s better to find a more voluminous form - it won’t seem much!

The Cornish apple pie exceeded my expectations. This is truly the best apple pie recipe ever. If you have a mixer, then preparing the dough will take a few minutes. I don’t recommend messing with the recipe without a mixer, because you will need whites whipped into strong foam, manually this is an hour of your precious time. If you don’t have a mixer, don’t be upset - bake (I will share the recipe in a few days), and you will be happy too!

To make a Cornish apple pie, we need:

  • 4 fairly large green apples (800 grams)
  • 280 g butter
  • 200 g sugar, regular, white, the dough is more beautiful with it
  • 320 g flour
  • 4 eggs
  • 120-130g sour cream
  • Baking powder sachet
  • Sachet of vanilla sugar or vanillin
  • 2 tablespoons brown cane sugar, if available

Cornish apple pie recipe:

Separate the yolks from the proteins, pour the proteins into a separate rather deep bowl and put them in the refrigerator.

Mix softened butter with sugar, vanilla and salt using a mixer. Take a mixing bowl more spacious, there will be a lot of dough.

Add yolks, mix, put sour cream, mix.

In a separate container, mix the flour well with the baking powder, add it to the dough in a couple of steps and work for a short time with a mixer until a thick homogeneous mass is obtained.

Now we take an ordinary spoon, transfer the proteins to a bowl with dough and gently combine them into a single whole with delicate movements of the spoon from top to bottom. It's time to put the oven on heating, the standard temperature is 180 degrees.

Lubricate the baking dish with butter. If you plan to serve the cake not in the form, but on a dish, line the form with baking paper first, so that later it will be easier to remove the product by the protruding edges of the parchment - the biscuit is extremely tender.

We spread the dough in a form, level it. Apples are peeled and core, cut into neat slices into 10-12 parts each. We stick the slices in orderly rows (and in a round shape - in circles) into the dough to the end. Sprinkle brown sugar on top. If you like cinnamon, you can sprinkle it on as well.

We send the form with the future pie to the oven for 40-55 minutes. The baking time depends significantly on the type of your oven and on the presence of a domestic attribute of a gas oven - pots of water. The main thing is not to open the oven for the first 20 minutes so that the biscuit does not settle. I check the readiness of the pie with a long wooden skewer (on such ones), it is very convenient.

Delicious and fragrant Cornish apple pie comes from England. Despite its sophistication, it is not difficult to prepare a dessert.

You will need:

  • 3-4 apples;
  • 220 g butter;
  • 3 eggs;
  • 150 g of granulated sugar;
  • 100 g 20-30% sour cream;
  • 250 g flour ( premium);
  • 1 tsp vanillin;
  • ½ tsp ground cinnamon;
  • 1 st. l. brown sugar;
  • powdered sugar - for dusting the finished cake.

Eggs are pre-cooled for half an hour. The yolks are separated from the proteins in any convenient way. You can use a special separator. The protein is removed in the refrigerator in order to beat it later.

In a saucepan or other deep container, melt the butter over low heat. Under no circumstances should you let it boil. After that, remove from the stove and pour in granulated sugar and vanillin. Stir until dissolved.

Continuing to stir the mass, introduce the yolks. To make the dough more magnificent, it is better to add the yolks one by one. Then put sour cream. In no case should you take sour cream of lower fat content than indicated in the recipe, otherwise the dough will come out too liquid. The flour is sifted and mixed with baking powder. Then pour into the dough and mix thoroughly until smooth.

Beat the cooled proteins with a mixer until a foamy thick state. Gently fold into the batter and mix until smooth. Sugar and lumps should be completely dissolved. The prepared mass is poured into a greased form and leveled with a wooden spatula. The diameter of the mold is 20-25 cm. The bottom can be covered baking paper.

Apples for this recipe take the most juicy. They are thoroughly washed in running water, freed from the peel and core. Cut into thin slices and spread on the surface of the dough. The juiciness of the dessert directly depends on the number of apples. Top the fruit with a mixture of cinnamon and cane sugar.

In an oven preheated to 180 ° C, place the form with the pie and bake for 45-50 minutes. It is not recommended to open the oven door in the first third of an hour, otherwise the apple pie will settle. The degree of readiness is checked with a toothpick. They pierce the cake in the center with it: if the stick remains dry, the dessert is ready.

After the cake is ready, leave it in the switched off oven for 5 minutes, then take it out and take it out of the mold. Spread on a dish and sprinkle with powdered sugar.

Pie with chocolate and cognac.

The resulting creamy mass is poured into a pre-prepared form in an even layer. Spread apples on top, sprinkle with cinnamon. The delicacy is baked until golden for 45 minutes at 180 ° C. Depending on the power of the oven, it may take a little longer.

I often cooked an apple pie with such a set of products, because it is almost always available. When I met this English pie I was curious to try this cooking method. And I was pleasantly surprised that it turned out completely different, much tastier.

Soft, tender cake with a velvety texture with a very soft middle and a slightly crisp edge. Perhaps this is the most delicious apple pie that I have ever eaten and baked. But I won't stop there. Don't take my word for it - try it.
