The impeccable debutant of the festival, the Respublica restaurant, presented a whole philosophy of food based on the balance of taste achieved by the selection of gastronomic pairings and mixology, the science of mixing drinks. Even at the end of the event, the team of the establishment, having stood at the table for about five hours, continued to explain to those interested with professional fanaticism what the word "mixology" means and why these are not cocktails in the usual sense.

The Respublica restaurant is an intelligent restaurant. But not an old goner, worn out over the years and stuck in a past era, but a fresh, interesting innovator who has not forgotten where his roots are. Respublica is tradition on the cloth of modernism. At least, such associations arise when you watch the dexterous hands of the restaurant chef Mikhail Nekrasov, the champion of Russia in 2013.

In addition to the original dish, Respublika's mixologist Yevgeny Shkarin selects the same unique drink, which is obtained as a result of almost alchemy - mixing sometimes faceless components, which eventually turned into a wonderful combination of flavors.

The dish should be understandable and tasty - this is how they think in the "Republic". Having tasted a perfectly served gastronomic pair of yellow chicken and a drink infused with currants, you understand that gastronomy can also bring aesthetic pleasure.

At the last barbecue festival in Gorki, I didn’t, then I decided that if I go again, then only as a judge.
How naive I was! But, now I can tell you how judging happens in food contests.

We met with an amateur chef and found out how a neurosurgeon became interested in cooking and why, in his opinion, women cook worse than men.

Dimitri neatly arranges the ingredients on the table. Today, an amateur chef prepares ravioli and sea bream. For an appetizing dish, Mediterranean fish, fresh green asparagus, eggs, shrimp, dry white wine, spices and red caviar were needed.

A user of the E1 portal became interested in cooking about five years ago. It all started with thematic forums - our hero cooked and posted photos of dishes on the site's pages. Then I decided to participate in competitions. Of course, it did not work out right away - the forum member combines a delicious hobby with the difficult work of a neurosurgeon in a Ural hospital.

I'm not lying. For ten years he worked as a doctor and suddenly began to sit on the forums, communicate with chefs, participate in competitions. Sometimes I get upset and offended when my dishes are criticized. And recently I decided to send a questionnaire to the show "Master Chef". And, oddly enough, passed the qualifying round!

In the TV show, in addition to Dmitry, four more Yekaterinburg residents were chosen, but it was the E1 forum member who got on the set and passed the tests. At the first stage, he decided to cook an Asian-style pumpkin soup with tuna tartare and won the jury over with his culinary skills.

The shooting lasted about a month, and the famous restaurateur Alexander Novikov, his companion Alexander Sorkin and the chef of the Italian restaurant Mirko Dzago sat on the jury. Before that, I starred in culinary television programs, so this was not the first experience for me.

In our kitchen, shrimp are already boiling in a saucepan, and Dmitry starts cleaning the fish, having sharpened special knives before that. Warns that bones should be removed from white fish after it is ready. Dorada cuts into small pieces and cleans the asparagus.

A real cook, as Syrnikov once said, must be clean in appearance and morals, with perfect taste, industrious, prudent, economical, sober, conscientious and God-fearing. I try to live up to these qualities.

Dmitry crushes the peeled shrimp in a blender and mixes with cream, adding a little salt, white pepper and thyme. After frying the mixture a little in a pan, it stuffs a thin dough with it. The resulting ravioli cooks over low heat.

Women always think a lot, get distracted. And it's very annoying in the kitchen. When you cook a dish, you need to concentrate, and a woman has a million thoughts in her head. Men, on the contrary, are focused on the result and think about the process. But of course, there are women who cook well, and men who do not know how to cook at all.

Pieces of fish and asparagus are fried by a member of the forum in a mixture of fragrant oils. Cream and a spoonful of red caviar are added to the evaporated wine - a delicious sauce is obtained. It remains to decorate the dish and a real restaurant masterpiece appears on the table. Dmitry says that he does not often cook like this at home - mostly on holidays and weekends. And on weekdays, after work, he enjoys his favorite dish - steak.

How do you feel about restaurants?

We don't have many good restaurants. You have to choose not to be disappointed. That's why I don't go often. So he came to one restaurant, ordered a duck and it was redone twice. Wrongly cooked, overcooked.

What about fast food?

Fast food is awesome. And high-quality fast food is not always harmful. True, it is very difficult for us to find one.

What is healthy food for you?

I myself think about whether healthy food can be tasty. So far I can't find an answer. Healthy food is different for every person. I think that you need to take a fresh and high-quality product with minimal processing.

I think you can only become a good cook. Of course, if all your family members work as cooks, then something will be genetically transmitted. Well, cooking comes with experience. And this is given to everyone, no matter if you are a man or a woman.
