You can make such a biscuit very simply, from available products, no special skills are required for this. The biscuit (although it is not) turns out to be very fluffy, loose. You can make a cake from it or simply pour it over with icing to taste. In the main recipe, there are 3 eggs, I had very large eggs and I took two. My form is 20 cm.

In order for the biscuit not to rise up like a hump, as it happened with me, you should not put the dough in a very preheated oven, as advised in the recipe. It is better to preheat the oven to 160-170 degrees, put a mold with dough in it, and after 10-15 minutes increase the temperature to 190-200 degrees and bake until tender.

We need the same products:

Remove all products from the refrigerator in advance so that they are at the same temperature. Beat butter with sugar. Since there is little oil and a lot of sugar, it is enough to grind the butter until it is white.

Add eggs one at a time and beat with a whisk until smooth.

Sift flour into dough, add baking powder, vanilla sugar.

Then add the zest of one orange. Mix everything until smooth. The dough turns out to be thick, you need to mix with a spoon.

Then pour in kefir, quenched in lemon juice soda and stir, and then beat with a mixer until fluffy.

The dough turns out to be smooth, fluffy, and in density it looks like sour cream.

Pour the dough into a mold. Lay the bottom of the mold with parchment, do not grease the walls.

Put to bake in an oven preheated to 170 g. After 10 minutes, increase the temperature to 190-200 degrees. Bake until dry. Cool the finished biscuit and remove from the mold. It is very soft and airy.

I poured melted chocolate on the biscuit, you can just sprinkle it icing sugar.

For a very long time I have been planning to bake a biscuit on kefir. Before that, somehow it was not necessary. And I made pies on it, and different pies, manniks, casseroles ... But a biscuit - never!

Usually I don't have yogurt in that amount at home. However, this time I made such a purchase on purpose - for this autumn cake!

Level of difficulty: average

Cooking time: about two hours (if you bake the cakes at the same time, it will turn out much faster)

Ingredients for the biscuit:

    1 and 1/2 cups sugar

    a pinch of salt

    1 and 1/2 tsp soda

    1 tbsp table vinegar

    sunflower oil for lubrication

For impregnation:

3 tsp alcohol
- 9 tbsp. fresh water

For the cream:

180 g butter
- 1 tbsp. cocoa
- 1 can of condensed milk

For decor:

Curly white and dark chocolate
- chocolate drops

Biscuit preparation:

Sugar was poured into a deep and large enough dish. I took a glass and a half. The recipe I took as a basis contained ... 3 glasses! For me it is a quiet horror ... I have not been able to imagine such a sweetness for several years. But you can of course increase the amount of sugar to your liking.

I broke all the eggs here. And beat it with a mixer until a light lightened foam mass.

I melted the butter in advance, because the biscuit needs it warm, not hot. I poured it into the sugar and egg mixture. Added a pinch of salt.

I took kefir 2.5 percent fat. But I think anyone will do.

I poured it all in at once. Whipped.

She quenched the soda with vinegar and stirred vigorously in the total mass.

I immediately sifted flour here. I beat it with a mixer for a short time, about 20 seconds.

She greased the mold with oil. I poured 1/4 of the dough into it. And sent it to the oven preheated to 160 "C.

Baked at 180-200 "C for about 20-25 minutes.

I did the same with the next three cakes.

Impregnation preparation:

At first I wanted to do a coffee soak. I'm a coffee lover, so sometimes I try to add coffee wherever needed and not needed))

However, then I changed my mind - after all, coffee would have colored the light cakes. So I decided to make it transparent. With what? Vodka! Rather, alcohol diluted with water.

I just put them together in a glass and mixed. This impregnation was applied to ready-made and cooled cakes.

Cream preparation:

I took the butter out of the freezer even before I started the biscuit. At the right time, it should already be very soft.

I combined it with a can of condensed milk and cocoa powder.

Beat with a mixer.

I put the first cake on a cake stand. I applied the cream.

She put three more cakes on top, each flavored with chocolate cream.

This is how it turned out in my cut. By the way, I have a form of a fairly large diameter. You can also divide the dough into 5 parts and increase the number of cakes by one more piece.

The cake turned out to be very tender and with a wonderful taste! Truly created a festive mood! ;)

The biscuit is ready! I cut it in half lengthwise and brush it with apricot jam.

I connect two pieces of a biscuit. You can sprinkle the biscuit with powdered sugar.

  5. The cooled pie, cut into 2 pieces and brush with any jam of your choice.
  6. You can sprinkle the top with powdered sugar or pour over melted chocolate.
