1. Dissolve sugar and salt in warm kefir. Crack in the eggs and beat a little with a whisk. Add flour with yeast in small portions and knead the dough. The dough should be soft.


2. Cover the dough with a cloth and leave to rise in a warm place.

3. Sprinkle the table with flour. We take a piece of dough and roll it into a layer about 0.5 cm thick. Cut out circles in the dough with a glass.

Ingredients:

For test:
- 1 glass of kefir (any fat content);
- 1 teaspoon of soda (without top);
- a pinch of salt;
- 0.5 -1.5 teaspoons of sugar (who likes what kind of dough);
- about 3 cups of flour.

For filling:
- 400-450 g of fresh dry cottage cheese;
- salt and sugar - to taste.

How to cook with a photo step by step




First we prepare the dough. We sift the flour.





Pour kefir at room temperature into the mixer bowl. We put salt, sugar and soda.
Add 1 cup flour. Mix with a mixer.





Gradually add 1 more cup of flour, constantly working with a mixer.







After the 2nd glass of flour, we change the mixer nozzles to spiral ones. The third glass is filled up quite a bit, carefully kneading. You can finish kneading by hand so you can feel the dough. It should be soft, elastic and fluffy, not tight.





We spread the finished dough on a surface dusted with flour, and set aside for 10-15 minutes.





It's time to start filling the dumplings. Curd must be fresh.







Knead the cottage cheese with a blender into a paste (or rub through a sieve). Add salt and sugar. Our stuffing is ready.





We divide the dough into approximately equal pieces weighing about 30 g - from this amount we get 18-20 dumplings.





Sprinkle the surface of the desktop (I make dumplings on a silicone mat) with a little flour. Try not to add extra flour - just so that you can roll it out. We roll each piece into a rounded cake 3-4 mm thick, about 6-8 cm in diameter. We also lay out the cakes on a lightly floured surface.




Then spread the filling on half of the cake (about 1 dessert spoon), not reaching the edge.







We cover the filling with the second half of the dough and connect the edges. First, just connect - fasten. And then we form the edge “in the assembly”: we squeeze the connected edges without dough with the thumb and forefinger and move the fingers a little, by 5-10 mm. We move 6-8 mm - and repeat. And so on until the end of the dumpling.





As soon as 6-8 dumplings are blinded (as much is placed on the multicooker tray), you can put it on to cook. And you can finish sculpting all the dumplings, and then cook them. The main thing - do not forget to flour the surface on which you spread ready dumplings so they don't stick.





Before starting cooking, be sure to read the instructions for your multicooker - it should indicate how to steam. For my multicooker, you need to pour water into the bowl at the mark with the number 2.





Complete with your multicooker (if it has a “steam” mode, there should be a special basket-tray with holes - it is installed on top of a bowl of water. As a rule, its surface is covered non-stick coating, so it is not necessary to lubricate it with oil before cooking dumplings.







We put the dumplings on a basket with holes in such a way that they do not touch each other. We put the basket in the multicooker on a bowl of water, close the lid and turn on the unit in the "steam" mode. We cook the first portion for 6 minutes, the next - 4-5 minutes.








Put the dumplings on a plate and serve immediately while they are still warm.

As I already wrote, the dough for dumplings should be very soft and not tight. To achieve this, it is important not to overdo it with the amount of flour. Before you start rolling out the dough. You determine the amount of sugar and salt for the filling yourself - in this regard, everyone has different tastes. Someone does not add sugar to cottage cheese at all, but instead serves honey, jam, preserves with dumplings ... And someone prefers dumplings with sour cream and is very sweet stuffing... I put 2 incomplete spoons of sugar and a pinch of salt on 400 g of cottage cheese, but you may like dumplings with a different amount. So be sure to try the filling to achieve the optimal taste.
