Recipe number 1 or how to prepare yeast-free puff pastry at home

Baking does not require much skill, but it will not take much time to cook it!


To make puff pastry without yeast, prepare these ingredients:

550 g wheat flour; 600 g of a mixture of plums. butter and margarine (in any ratio); 250 ml of water; teaspoon of salt; ¼ teaspoon of citric acid solution.

Stages of step-by-step preparation:

  1. Dissolve lemon (1 teaspoon) in hot water (2 teaspoons).
  2. In a separate bowl, mix well the water and citric acid, add salt.
  3. Sift the flour on the table with a slide and make a small indentation in it.
  4. Gradually pour in the liquid and knead a stiff dough. It shouldn't stick to your hands.
  5. Shape the dough into a ball and place it in a bowl.
  6. Cover it with a towel and set aside for half an hour.

Let's start with fatty ingredients:

  1. Remove the margarine and butter from the refrigerator and wait until they become soft.
  2. Transfer the mass to a plastic bag and give it the shape of a rectangle using a rolling pin, cool.
  1. Put the dough out of the bowl on the table and roll it into a 1 cm square. Try to make it a little thinner around the edges.
  2. Place a rectangle of oil in the center of the layer (see photo).
  3. Without stretching, cover the butter with one corner of the dough, then the opposite, and so lay all four sides.
  4. You will get an envelope that you need to roll out again until you get a rectangular shape.
  5. Fold the layer in 4 layers, like a booklet, and wrap it in food paper.
  6. Send to the refrigerator for 30 minutes.
  7. Remove and roll out again to give the dough its original shape - a rectangle.
  8. Fold it like a book, in 4 layers and repeat the cooling procedure, which lasts half an hour.
  9. Do the described technique at least 4 times, so you will ensure that the puff pastry will have about 200 layers, and the pastries will be super fluffy.
  10. The last folding is completed, and you send the workpiece to the refrigerator for 12 hours (or more).

Starting to prepare baking, take out the yeast-free puff pastry and separate a piece of the desired size from it. Divide the rest into several servings and arrange in bags. Store blanks in the freezer.


If you want the pastries to be airy and crispy, remember a few rules. First, do not get carried away with emergency defrosting, as you will only spoil the product.

Simply place the unpacked puff pastry on a board and let it rest for a few hours. You can speed up the process a little and call on a convector or other heat source to help.

Do not use a microwave oven to defrost dough.

Secondly, do not separate the layers from each other, because you did not create them with such difficulty for this.

Puff airy yeast-free dough, prepared according to recipe No. 1, is the best suited for puff ears. These pastries, sprinkled with sugar, are an indispensable attribute for table setting for breakfast.

Recipe number 2. You can prepare yeast-free puff pastry without repeated rolling


From the first recipe, this method differs in speed and ease of preparation. You do not have to roll out and fold the dough several times, everything is much simpler.

Be prepared that the cake won't rise as high, but it won't be flat either. If you need to bake a pie with cheese or cheese in a short time, prepare a treat with a sweet filling, learn how to cook puff pastry without yeast according to recipe No. 2.

So, you need the following ingredients:

2 cups wheat flour; 100 ml of ice water; 180 g butter; a pinch of salt; 1 st. a spoonful of table vinegar 9%; 1 egg.

Cooking:

  1. Chill water and butter.
  2. Sift flour into a bowl, salt and add oil.
  3. Chop the mass with a knife to make crumbs.
  4. To make it easier, you can use a fork, but already at the final stage. By the way, do not touch the puff pastry with your hands.
  5. Mix liquid ingredients - water, egg and vinegar.
  6. Combine the dry and liquid parts together.
  7. Knead until smooth until a lump forms.
  8. To bake successfully, put the puff pastry in the refrigerator for a couple of hours, and then start working with it.

Nothing terrible will happen if you can not spend the entire portion at once. Roll out the rest, wrap in cling film and set aside. Guests will not take you by surprise, delicious pastries for tea will be ready in 30-40 minutes.

Homemade quick puff pastry


Now I want to teach you how to cook quick puff pastry at home in a quarter of an hour. To some, such a task will seem impossible, but there are recipes, following which you will master this science.

You can use the quick puff pastry prepared under my guidance for baking pies with salty and sweet fillings, samsa and the famous Napoleon puff cake and make various puffs from it.

Baking is very crispy, multi-layered, but not as fluffy as in the classic version. I think that such a minor drawback will not affect your desire to learn how to cook quick puff pastry, and you will be happy to learn recipes that will prepare the base for your favorite desserts in 15 minutes.

Let's not waste time, and now I will provide your attention with a list of ingredients for puff pastry.

It: glass of water; 2 ½ cups wheat flour; a teaspoon of baking powder; half a pack of butter and a pinch of salt.

The set of products is small, but from them you will make the dough quickly and without problems.

As you can see, homemade puff pastry is made from simple ingredients that can be found in almost any kitchen.

And now let's proceed directly to the process, as a result of which you will get a puff pastry recipe. Subsequently, excellent puffs can be prepared from it.

So, we begin to knead quick puff pastry to bake puffs or pies with filling:

  1. Sift the flour into a deep bowl and mix it with the baking powder. If the dough loosening component is not at hand, replace it with regular baking soda. She will be found in the kitchen cafe for sure. But before you add it to the dough, extinguish it in a cup, where ahead of time pour table vinegar in the amount of one tablespoon.
  2. Dissolve the salt in water and pour the solution into the recess in the flour.

If your plans do not include baking on the same day, leave the quick puff pastry until the time you need it.

By the way, the dough recipe is good because it can be made in advance and used when the need arises. For example, unexpected guests descended, and you have puffs or other pastries for tea almost ready.

All you have to do is roll out the puff pastry and cut out blanks from it.

Homemade puff pastry puffs


Roll out a layer of dough and cut strips from it, which you then divide into rectangles, and these, in turn, into triangles.

From an acute angle, start folding puffs - “bagels” (as shown in the photo), putting some sweet stuffing on the dough (chopped apples or banana slices).


Sprinkle homemade puff pastry with ground cinnamon mixed with granulated sugar, not reaching a few centimeters from one side to the narrow edge. Roll the dough into a roll and divide it in half.

Cut each half in the center and turn it outward along this mark so that the layer of cinnamon is visible. The photo clearly shows how you have to make the “curl” puffs so that they look attractive.


Roll out the dough into a rectangular shape and divide it into two parts along the length. Visually break each half in half and make parallel cuts on one of them with a sharp knife (5-6 pieces will be enough to make the puffs look attractive).

The edges of the pies should be pressed tightly and the puff pastry should be molded, preventing the juice from flowing out, which will stand out from the berries in a hot oven.
