Marzipan cookies are prepared without flour, they are tender, nutty, crumbly and very tasty. Such cookies will surely please all your guests and relatives, we take marzipan mass as a basis, which you can buy in a store or cook yourself. Cooking this cookie does not take much time and effort, it is perfect for festive table as an end or just for a family tea party. Be sure to follow the cooking steps to get the right dough consistency.

First, about the products that we need to make these cookies.
All of them should be the same, what is called room temperature. So butter, marzipan mass and the egg we take out in advance from the refrigerator.

By the way, about the marzipan mass - if it is not possible to purchase ready-made, then cook it yourself.
This will require 150 g almond flour and 150 g of powdered sugar. They must be mixed well, then sieved. And then add 1 egg white room temperature and grind until a thick mass is obtained. If you want a richer almond flavor, you can add a few drops of almond essence.


When the products have reached the desired temperature, it remains only to prepare the dough. There are no tricks here - just put the sifted flour, powdered sugar, a little salt into a large bowl, vanilla essence, softened butter and marzipan mass.


With a mixer, using hook attachments, quickly knead the dough - not for long, just until the components are completely combined. Then we crush the dough with our hands into a ball, wrap it in a film and put it in the refrigerator - at least one hour. During this time, the dough will "harden" and can be rolled out.


Roll out the dough on a lightly floured work surface to a thickness of 0.5 cm. And then we cut out cookies using special molds.

I specially bought such a hare mold for making cookies for Easter.


But for such a holiday, you can also make egg-shaped cookies, and this does not necessarily require an oval mold. Just cut out round cookies using, for example, a regular glass.


And then press the sides, giving the shape of an oval.

While we rolled out and cut out various cookies, the dough softened noticeably. If you start baking it in this state, then there is a chance that the cookies will blur and lose their desired shape. Therefore, I advise you to put the blanks in the refrigerator again before baking. While the oven heats up to 180 degrees, let the butter dough harden well. With this technology, the dough, after getting into a hot oven, quickly seizes and does not "spread" in the future, i.e. the cut shape is preserved.

Cookies are baked for a short time - only about 7-10 minutes, until the edges are slightly browned.
We take them out of the oven carefully, because they are now very fragile, and cool completely.


While cookies are cooling, cook icing sugar. To do this, mix the sifted powdered sugar with lemon juice until a mass is obtained, in density resembling sour cream. We divide the resulting mixture into several parts and tint them in different colors with food coloring.

The resulting color mixtures are immediately placed in some sealed containers (bags, plastic bottles ...), otherwise they will begin to solidify quickly.


Marzipan is a delicious treat! Both shaped figures and sweets are made from it. There are also marzipan shells for cakes, and layers in confectionery. But have you ever tried pastries from ... marzipan dough? To be honest, it is not very common - because its main component is still very expensive. Where I met such products on sale, 100 g of marzipan cookies cost 3.5-5 euros.

The marzipan used in this recipe has just over 50% almond content. I took this variety so that those who cannot buy marzipan in the store can imitate it at home according to the recipe. If you have a higher percentage of marzipan on sale, you will need to add sugar to the dough. From eggs, we need only proteins. Almonds do not have to be petals, any kind of crushed one can be used. For perfume, I use bitter almond extract (10 drops), you can use a little more Amaretto instead. The type of oil does not play a role, it needs a clean minuscule - for roasting almonds.

We tear the marzipan mass into small balls, add 2 egg whites, vanilla sugar and bitter almond extract to it. If the almond mass you bought is too hard for some reason, put it in a warm place before starting work, for example, on a battery, and try to let it become more plastic.

For the next step, it is helpful to have a cup of water handy. Pre-wetting each time the fingers in water, we form small balls from the marzipan dough and roll them in fried almonds. From this amount of dough, you can make 20-24 balls.

Some people like it, but for me, marzipan is associated primarily with holidays, and most of all with Easter. Although marzipan is also often used for the Christmas holidays, but at the mention of marzipan, I have thoughts about a bright spring holiday. Therefore, this cookie has an Easter character for me, I even gave it the shape of eggs, although before and after Easter, it will also come in handy. Especially for coffee.

I used to make this cookie. Purchased can also be used. Marzipan is a wonderful addition to baked goods, as it immediately gives it an interesting texture and brings in a pleasant almond flavor. Marzipan itself is nothing more than almonds, sugar and a little almond extract or essence, sometimes even egg white. Therefore, it is not surprising that pastries with marzipan are so delicious.

The consistency of this dough, due to the presence of marzipan and the absence of eggs, is quite fragile. Therefore, you need to be patient when swinging and choose shapes for cutting cookies with a small amount of bends. Simple geometric shapes are ideal: eggs, simple flowers, houses, and the like. When choosing shapes for cutting cookies with a more complex structure, the dough will tear.

Ingredients

  • 250 grams of flour
  • 150 grams cold butter
  • 100g
  • 50 grams of sugar

1) Place all ingredients in a blender and blend until crumbly.

2) Beat the dough into a ball, wrap in cling film and refrigerate for 30 minutes.

3) Remove the dough from the refrigerator. Preheat the oven to 180 ᵒС.

4) Roll out the dough with marzipan thinly on a floured surface and cut out the cookies of the desired shape.

5) Place the cut out cookies on a baking sheet lined with parchment paper or a silicone mat.

6) Insert the baking sheet into the preheated oven and bake for 8-10 minutes. The cookies should "set" and the edges should be slightly darker. It will completely harden as it cools.

I wanted to somehow try my abilities in mastic - I bought it ready-made, but, unfortunately, it didn’t fit at all for modeling. I read that it can be used as a filling for baking. So I baked this delicious cookies"Sweet"! I especially like the dough, it turns out soft and, at the same time, crispy and crumbly. There is no sugar in its composition, so the sweetness depends only on the filling - it can be thick jam, and chopped dried fruits, candied fruits, and sweet curd filling, or marzipan, like mine. With any filling it turns out very tasty, homemade cookies, which cannot be compared with any purchased one (checked repeatedly!)!

From this amount of ingredients, 14 pieces are obtained.

Ingredients

To prepare cookies "Sweet" you will need:

flour - 150 g;

baking powder - 1 tsp;

egg yolk - 1 pc.;

sour cream - 60 g;

butter - 45 g;

powdered sugar for serving.

For filling:

marzipan - 150 g.

Cooking steps

Sift the flour and baking powder into a wide bowl, add the butter, cut into cubes, grind with your hands until crumbly.

Collect the resulting mass with a pea, make a depression in the middle, put sour cream and yolk, mix thoroughly until the dough begins to come together.

Put the dough for cookies "Slastena" on the work surface and quickly knead a homogeneous dough (no more than a minute - you do not need to knead for a long time so that the structure of the cookies is tender, crumbly), collect into a ball, wrap in a plastic bag and put in the refrigerator for 10 -15 minutes.

Then take the dough out and on a working surface dusted with flour, roll it into a rectangular layer 2-3 mm thick (I got 20x50 cm in size).

Sprinkle the entire surface of the dough with grated marzipan.

Cut the roll into pieces of 3-4 cm. Dip the slices in flour.

Bake in a preheated oven at 180 degrees for 25-30 minutes.

Put the finished cookies "Slastena" with marzipan on a wire rack or dish and cool completely, then sprinkle with powdered sugar.
