The best recipes. Mogul-mogul: it's interesting

Mogul-mogul is a drink that is not only famous for its unusual taste and aroma, but is also a cure for many diseases. No wonder the kind-hearted physician Aibolit from the book considered him a panacea for all diseases, advised both children and animals. If you suddenly have a trouble with your throat or just want to diversify your dessert table, then cooking eggnog is a win-win option.

The unusual and controversial origin of the drink

There are a myriad of myths, legends and variations on the origin of the drink. Among them are the three most popular versions. According to one legend, mogul-mogul at home was first prepared by a synagogue minister named Gogel. A worship leader from Mogilev once lost his voice and almost lost his job. A long search for a remedy that could cure his throat led to the invention of a wonderful drink. It was based on chicken eggs and salt. He advised to dip a piece of bread in a “raw egg” and shake the mass a little.

Sweet mogul is an invention of the German Manfred Keukenbauer. The confectioner specialized in the production of canned sweets. During the next "sweet" experiment, "nectar" was born from egg mass and sugar.

According to the third version, the Polish Countess Bronislava Potocka invented the drink. She modernized Gogel's recipe by adding thick honey instead of bread. And the name of the drink gave a new one. Now it was a mogul. The recipe at home could be prepared very quickly and easily, so the drink quickly became insanely popular among both sweet lovers and those who wanted to restore the health of a hoarse throat.

In fact, according to historians, eggnog is a food that appeared long before Keukenbauer's confectionery experiments or the first symptoms of Gogel's throat disease. Mentions about it date back to the third century AD. In the Talmud, an egg mixture with honey was considered not even a drink, but a full-fledged dish.

Mogul-mogul: a classic recipe

The most popular cooking recipe is the Polish version. Many chefs call it a classic. There will be no exact number of ingredients in the recipe, since everyone determines for himself the number of eggs and the required degree of sweetness of the drink.

Egg yolks should be thoroughly mixed with the right amount of sugar. The result should be a snow-white thick mass. Proteins are whipped separately and only at the last stage are added to the yolks. In the interval between mixing the main ingredients, fruit juice or berries, crushed to a gruel, can be added to the eggnog.

Useful

If you decide that this dish should combine taste and benefit, then we suggest preparing the next eggnog. It will be a mixture consisting of one raw egg, two tablespoons of dry red wine, a pinch of salt and a pinch of nutmeg. In addition, 150 ml of milk will be present in this recipe.

Add wine, sugar and salt to the egg. Mix everything thoroughly. Then add warm boiled milk to the egg mass and beat well again until foam is obtained. Then it will be necessary to strain the mass through the smallest sieve that can only be found in the kitchen. Pour the drink into a glass. Sprinkle the top with ground nutmeg.

For Easter cake

Many did not even think that the delicious white fudge on the Easter cake is the eggnog. For Easter, it is prepared according to the classic recipe, only without the addition of berries or fruit juices.

Squirrels and yolks are “seated” in different plates. Work will begin with the proteins, which will need to be whipped into a lush white mass. Gradually, while beating, add granulated sugar. Whipped yolks are introduced at the very last moment. But many housewives see eggnog for Easter cake as white, so they simply do not add yolks to the resulting mass, leaving it snow-white.

It is important to remember that Easter cake should be watered with fudge only after the pastry has completely cooled down. Then the eggnog for Easter cake, the recipe of which we proposed, will quickly harden and not spread, losing color and changing consistency.

Honey

Now let's move on to the eggnog recipe from Countess Potocka. Such a drink will be more beneficial due to the presence of honey and milk.

For cooking you will need:

  • two yolks;
  • a glass of hot milk;
  • six tablespoons of liquid honey (or three tablespoons of thick);
  • two tables. tablespoons of citrus juice (lemon, tangerine, orange).

Pour milk into a small container and put on fire. Add honey there and wait until it completely dissolves. Then add two yolks, you can beat them a little with a fork beforehand. When the mass warms up a little, add lemon juice.

Remove from heat and pour into a large bowl with high edges. Using a blender or mixer, beat the mass until a fluffy foam is obtained. Drinking such a useful "medicinal" eggnog is recommended on an empty stomach for diseases of the throat (tonsillitis, cough, loss of voice, hoarseness, etc.)

The cure for Aibolit

If your child does not want to take bitter pills and categorically refuses to use nasty, tasteless potions, then we advise you to cook baby eggnog. This is a drink from the favorite doctor from the book, so the kids will not refuse such a healthy and very tasty treat.

Heal everyone, heal

Good Doctor Aibolit!

And every gogol

Every mogul,

Gogol-mogul,

Gogol-mogul,

He will treat you with mogul-mogul.

Recipe for children

To make a drink from the "book doctor", you will need:

  • two eggs;
  • 200 grams of sugar;
  • 100 grams of cocoa;
  • one spoon of plums. oils.

To decorate and even more attract the child's attention to a useful medicine, you can take pieces of chocolate or nuts.

The cooking process is as follows. First, break the eggs in such a way that the protein is separated from the yolk. The latter should be ground with sugar until a homogeneous yellow mass. Eggs for the preparation of baby eggnog-mogul are recommended to be taken at home, and not purchased, not credible.

Add cocoa and butter to the yolks. Mix all ingredients thoroughly. Whipped in a strong foam proteins are added to the egg yellow mass. Pour the drink into a glass and decorate the top of the delicacy with pieces of chocolate or finely chopped pieces of walnut.

For kids. Option 2

If you can’t lure your baby with chocolate, then try using the eggnog recipe, where a fruity note is used as a “bait for capriciousness”. To prepare a drink, you will need two chicken eggs, a glass of milk, a pinch of nutmeg, honey or sugar, juice (peach, pineapple, apricot). Try to take sweet juices so that the drink ends up being the same.

In order for the eggnog to be lush and airy, confectioners are advised to always separate the proteins and yolks before whipping. Of course, it will take a little more time, but the result is worth the effort.

So, the whites were beaten, the yolks were mixed with sugar or honey, and they were also thoroughly beaten with a mixer whisk. Add juice and a pinch of powdered nutmeg to the yolks. Now you can mix the yellow and white masses. The resulting drink is poured into a glass and decorated with nuts, berries, or simply sprinkled with cocoa powder through a beautiful stencil.

If the mogul-mogul is prepared for the child not as a delicacy, but exclusively in the form of an auxiliary drug, then it is recommended to use it only in a warm form.

Coffee

There is not only a children's recipe for making eggnog. If you decide to please adult family members with a tasty and healthy treat, then we recommend making a coffee drink. To do this, take:

  • chicken egg (if desired, quail eggs can also be used, but their number will increase to five pieces);
  • 250-280 ml of milk;
  • sugar;
  • ground coffee - 40-70 grams (depending on the love of the fortress).

We are already doing standard manipulations with protein and yolk. Beat them separately, and add granulated sugar to the yolks. Now alternately add milk, ground coffee, a lush protein component to the glass. The more coffee is added, the stronger and richer the eggnog will be, respectively. The last ingredient will be the yolk whipped with sugar (it will also serve as a dish decor). You do not need to decorate such a drink, but if you wish, you can add a few grains of coffee on top. They will dissolve under the influence of temperature and form a bizarre pattern.

Everyone knows that eggnog is an excellent remedy that is recommended for medicinal purposes for sore throats, against hoarseness, and loss of voice.

The easiest recipe: recommends whisking a couple of egg yolks with sugar and taking two teaspoons in the morning on an empty stomach. But nowadays mogul-mogul has become quite widespread, and it can be prepared in many ways.

Honey mogul-mogul also helps very well if the throat hurts, of course, when there is no allergy to honey, lemon and orange juice. So, beat the yolk, add two glasses of hot milk and six tablespoons of honey, then two tablespoons of orange or lemon juice, all this needs to be warmed up a little and add the protein whipped with sugar; taken on an empty stomach.

Children's eggnog was also prepared by Aibolit in Chukovsky's fairy tale, and not a single kid will refuse this delicacy. And if your throat is hoarse or a sore throat has crept up, then this drink will become just a lifesaver for those children who do not like medicines.

Just please, when offering it to your child, remember if your baby is allergic to egg yolk. If not, then feel free to give him this delicacy: in addition to the therapeutic effect, the cocktail will cheer up the baby, and if you also offer him cookies and a good bedtime story, then the disease will completely run away without looking back.

To prepare, grind the yolks with sugar, add melted butter and a little cocoa, beat the resulting mass well with a mixer.

Fruit eggnog can be prepared with the addition of fruit juice (cherry, apple, pomegranate, currant, orange, apricot). Beat two yolks with a mixer, add a pinch of salt, three tablespoons of sugar and half a glass of juice, still stirring, add two glasses of cold milk and half a glass of ice water, then add the protein whipped to a steep foam and sprinkle with grated nuts. So we got a cocktail that you can drink through a straw.

Eggnog "in Polish" prepared with the addition of strawberries or raspberries with drops of lemon juice. First, wipe the yolks with sugar, and beat the whites into a fluffy foam. In Polish, the name of this cocktail sounds like "kogel-mogel".

Coffee mogul-mogul is prepared at the rate of one egg for four coffee cups. Beat the protein with a mixer, and grind the yolk with sugar. Pour warm milk at the bottom of the cup, and then freshly brewed ground coffee, add a little yolk on top, and then, in the center, protein. At the same time, you need to drink this drink from a cup without stirring.

Alcoholic eggnog served in bars is more aimed at the female half of the visitors, as it turns out to be too sweet, but I think men with a sweet tooth will like it too. To prepare it, mix the yolk, cream, sugar syrup, ice with rum (wine, cognac, brandy, whiskey), then filter and serve in a tall glass with crumbs of nutmeg.

Eggnog "in Dutch" called "Lawyer", and prepare it with the addition of cognac as follows. First, the yolk is beaten with salt and sugar until a thick mixture of lemon color is formed, then cognac is added and this mass is placed in a water bath. The cocktail is prepared over low heat, stirring gently, the main thing is not to overheat, the drink should be warm, not hot. After removing from the water bath, you need to add vanilla, and then make a "cap" of cream. And thus, a cocktail turns into a dessert that is not drunk, but eaten with a spoon.

Of considerable interest is the history of the birth of this cocktail. Its name comes from the Low German expression Kuddel-muddel. It is believed that the eggnog was invented by confectioner Manfred Keukenbauer during experiments on canning sweets, and a well-known food concern acquired a patent for its mass production for one and a half million marks.

But, going deep into history, you can find out that there is a legend that says that more than a hundred years ago this drink was invented by the cantor of the synagogue Gogel from Mogilev, who lost his job due to loss of voice. In search of a remedy that could restore his voice, Gogel came up with a recipe that was as follows: “take egg cheese and cock it in a mug, crumble bread, salt and shake.”

You will need:

Cooking order

  1. We place the separated protein from 7 chicken eggs in a glass dish and keep it so that the proteins and dishes warm up to room temperature (24 degrees).
  2. Add a tablespoon of lemon juice and start whisking.
  3. Beating is carried out until the mass becomes white foam, which does not drain from the whisk of the mixer, but stretches and takes shape.
  4. We add sugar, but powdered sugar is better, which is sifted so that there are no lumps.
  5. Then beat again until the sugar is completely dissolved.

Mogul. A miraculous delicacy from a famous work for children about Dr. Aibolit. With this medicine, the good doctor regaled sick camels. But a simple, at first glance, cocktail is actually distinguished by magical healing power. L The food helps with many diseases, although it acts as an adjuvant therapy.

No one can reliably say where this delicacy came from. There are many versions, but none of them can be considered reliable.

Historians speak of a synagogue minister with the surname Gogel. It was he who came up with a simple, but very effective remedy that can not only restore the voice, but also relieve a painful cough. The main component of the "medicine" at that time was an ordinary chicken egg. It was beaten into a homogeneous mass, a pinch of salt was added to it, and then it was consumed in this form with a piece of bread. Probably, this is where the habit of artists and speakers began to drink raw eggs to restore vocal cords and a sonorous voice.

According to the second version, the Polish Countess Bronislava Pototskaya prepared a magnificent delicacy. Her delicacy was more elaborate and resembled tender nectar. The composition of the dessert necessarily included natural honey. The dish was more like a cream, so it was served at the end of the feast.

According to the third version, which bypassed everyone in time, the eggnog was known as early as the third century AD. Evidence of this is contained in the great book of all time, called the Talmud. Of course, this drink did not bear the name familiar to us, but nevertheless, its recipe, consisting of eggs, bee honey and spices, was widely known to the population. This composition was considered a complete dish and was always served as a sweet end to the meal.

Composition and useful properties of eggnog

As part of the eggnog, cooked according to the classic recipe, there are only two components:

  • chicken eggs;
  • natural honey or brown sugar.

Modern chefs replace chicken eggs with quail eggs. It is important to know that duck and goose eggs are not used for whipping eggnog because of their high viscosity and specific taste.

There is no single proportion and list of ingredients for making a delicious drink. Everything will depend on the desire of the chef. In modified recipes, in addition to the above products, a delicate dessert may contain:

  • red grape wine;
  • cognac;
  • nutmeg;
  • cinnamon;
  • vanilla;
  • butter;
  • natural black coffee;
  • fruit juice or fresh berries;
  • table salt;
  • cocoa;
  • cow's milk or cream.

Mogul-mogul cannot be called a dietary product. The calorie content of the treat will depend on the products that make up the dish.

A drink similar to a modified eggnog is widely known in Scotland. It is called egg milk, which literally sounds like eggnog. True, it does not have a therapeutic effect, but serves only to satisfy gastronomic needs.

Cooking at home

The classic recipe for making eggnog at home is to beat eggs with sugar and other ingredients. To prepare this delicacy you need to have:

  • mixer with two whisks;
  • submersible or stationary blender;
  • a regular spring-shaped whisk.

It’s good if the oar is electric, but if there is no such device, then you can cook a delicious dish by hand.

The technology for preparing treats is as follows:

  1. The main product - eggs - is washed in running water, and then broken into a deep container, while separating the yolks from the proteins.
  2. The yolks are cooled in the refrigerator, and then whipped with sugar. If you cook without it, then put natural, slightly candied honey. Beating the delicacy will take a little longer, but such a product will be more useful.
  3. If the culinary specialist wants to add additional components to the eggnog, then it's time for them. Spices and other ingredients are put into the sweet mass of yolks at the same time. The resulting mixture is again whipped with a mixer or whisk into a stable foam.
  4. At the end of cooking, whipped proteins are introduced into the resulting air mass. The secret to quickly getting the right consistency is a pinch of fine salt. It will not be felt in the finished treat.
  5. Mogul-mogul is mixed at high speeds, and then immediately laid out in portioned bowls or used in another way.

If you cook eggnog according to the classic recipe, then step number three should be omitted. A step-by-step recipe for preparing a nutritious, simple and at the same time great treat can be found in the video tutorial attached to this section of the article.

Use in cooking

Mogul-mogul is used in cooking as an independent dessert or for preparing other culinary masterpieces. A delicacy prepared according to the classic recipe is most often used for layering cakes and covering the top of Easter cakes, but sweets created according to an extended list of ingredients can be used as:

  • impregnation for biscuit cakes;
  • decorating the top of cakes and pastries;
  • delicious addition to brewed coffee or cocoa;
  • basics for low-alcohol drinks and cocktails.

Alcoholic drinks based on this dessert are most often prepared with the addition of vodka, cognac, whiskey or rum. This composition is also used to impregnate complex desserts based on biscuits and shortcrust pastry.

If you add milk and swollen gelatin to a mass of beaten eggs, sugar and applesauce, then you can use such a blank for making homemade marshmallows. All that the hostess needs to do is to deposit lumps of arbitrary shape on a baking sheet with parchment, and then bake the delicacy at a temperature of 100 degrees Celsius in the oven for fifteen minutes. You can give air drops the shape of store marshmallows using a confectionery syringe and special nozzles for it.

It is recommended to add a few drops of lemon juice and a pinch of salt to the glaze for covering Easter cakes. These ingredients are added to proteins. The secret of whipping the latter into a stable foam is that the workpiece must be cold.

A magnificent dessert can be served at the Christmas or New Year's table, decorating it with cocoa. You can also make a puff treat by alternating brown and white dessert. It is desirable to complete this magnificence with orange syrup and chocolate chips, and it is desirable to serve the cream in low transparent glasses or grog cups.

Benefits, harms and contraindications

With regard to the benefits, harms and contraindications to the use of eggnog, the following should be noted. Egg dessert is contraindicated for children under three years of age, as well as for those who are allergic to chicken protein.

It is also important to know that, as such, a delicacy cannot cause harm. The only danger from consumption is salmonellosis. But the risk of getting sick with them is only if the eggs were infected with this virus. It is believed that quail eggs are safer in this regard. That is why they have recently been more often used to make eggnog.

In general, the effectiveness of the mogul-mogul in the treatment of diseases such as:

  • laryngitis;
  • tracheitis;
  • angina.

It is also often used "the most delicious medicine in the world", which necessarily includes natural honey, as an adjunct therapy for severe cough left after the treatment of bronchitis. There are also positive reviews about this hangover drink, because the product has a soft creamy texture and perfectly copes with irritation in the stomach caused by alcohol.

Mogul-mogul helps to quickly restore lost strength, because the delicacy contains protein and other components that can bring a person into the desired shape. It is important to remember that dessert should not be abused, and diabetics should eat it very carefully. Easily available glucose can cause a spike in blood sugar.

There is also a positive effect of treats on potency. The best effect is manifested if the dessert is taken regularly for a long time, and quail eggs are used for cooking. Alcohol should not be added to the remedy for the treatment of sexual dysfunction, because it has a destructive effect on male power.

From a cough or just for fun, as a treatment or to cheer up - eggnog will always be appropriate! And about how and from what to cook it, we told in this article.
