The water temperature should be between 30-40 degrees Celsius. A low temperature can inhibit the process of yeast action, and an increased one will simply kill them, and the dough will not work. Cover the dishes with diluted yeast with foil and put in a warm place for 10 minutes.

The mass should increase slightly in volume, and bubbles will appear on its surface, which indicates the action of yeast.

Kefir should be at room temperature, very fresh, without sour taste, otherwise it will have a bad effect on the dough.

Add the egg to the kefir and mix well.

Then pour in yeast water, add oil, salt and sugar, mix gently until smooth.

Now flour is gradually added.

Flour must be sifted, and better - two or three times. This procedure enriches it with oxygen and gets rid of small debris that may be present in it. Please note that the flour you are using must be sealed to prevent moisture ingress, and the expiration date must also be on the packaging.
