If you need to whip up delicious baked goods, make an instant puff pastry at home. Just 15 minutes, and you can pick up a recipe. I offer three options - the simplest, in butter, the more rich - in sour cream, and yeast dough in thin layers. The dough is light, airy. Suitable for baking cakes, including the eminent Napoleon, samsa, tongues, puff buns with a filling, savory pies. And many other tasty treats.

The lamination of the dough structure is given by chopped butter and flour. The fact is that, with all the desire, it is impossible to evenly distribute fat. Due to this cooking technology, layers are obtained.

Attention! The appearance of citric acid or vinegar in recipes shouldn't confuse you. An acidic environment improves lamination. Do not report it - the stratification will decrease, instead of the desired product you will get shortbread dough. There is enough acid in the recipe with sour cream.

Instant puff pastry

The easiest recipe for a quick lazy home cooking in butter or margarine. 10-15 minutes, and you have a preparation for any delicious dough dish in your hands.

Take:

  • Flour - 500 gr.
  • Butter - 400 gr.
  • Water - 200 ml.
  • Salt - ½ small spoon.
  • Lemon juice - a tablespoon (can be substituted for a teaspoon of vinegar).

The first important step is to put the water in the freezer for a while, it should be very cold, almost ice cold. Then pour into a bowl. At the same time, send the oil to the freezer.

Beat in an egg, salt, splash with lemon juice.

Whisk well and place on the refrigerator shelf. Do everything quickly so that the contents do not have time to warm up.

Pour flour onto your work surface. Remove the oil from the freezer. We freeze the oil for one purpose - it is rubbed much easier without smearing on the grater.

Begin to rub the oil with the shavings on the coarse mesh of the grater. Sprinkle the grater with flour constantly so that the oil does not stick. For the same purpose, constantly dip the piece in flour.

Rub in small portions, immediately stirring the shavings with flour. When the oil is empty, both components should be completely mixed.

Add eggs gradually while stirring.

Would need:

  • Flour - 500 gr.
  • Margarine for baking - 200 gr.
  • The yolk of one egg.
  • Sour cream (curdled milk, fatty kefir) - 100 ml.
  • A pinch of salt.

How to cook:

  1. Freeze the margarine, then chop into crumbs with a knife, or grate.
  2. Place in a bowl, add yolk, sour cream. Take sour cream only chilled.
  3. Pour flour in portions, while mixing the ingredients.
  4. Knead the dough, roll into a lump, send in the cold for a couple of hours.

A quick recipe for yeast puff pastry at home

For sweet pies, cakes, in a hurry, it is better to make a puff pastry with yeast. The recipe is used in the preparation of Napoleon.

  • Flour - 550 gr. + for powder.
  • Butter - 200 gr.
  • Egg.
  • Dry yeast - 7 gr.
  • Milk - 130 ml.
  • Salt is a teaspoon.
  • Granulated sugar - 3 small spoons.
  • Water - 85 ml.

How to knead the dough:

  1. Heat the water, add the yeast with sugar, stir. Heat to dissolve and rise for 10 minutes.
  2. Separately, pour milk into a bowl, beat in an egg. Stir quickly, pour in the dough. Send again to a warm place.
  3. Pour flour on the work surface, add a couple of tablespoons of sugar, one salt. Stir.
  4. Cut butter into small pieces directly on the flour. Chop with a knife or rub and sprinkle with flour immediately.
  5. You don't need to knead the dough, just stir. Collect at the end.
  6. Slowly start topping up the sponge mixture. Pour in a little, stir. Then add a little more and mix again.
  7. Remember the dough ball a little, but don't try too hard, it needs to be shaped into a ball. Do everything quickly so the oil doesn't melt.
  8. Wrap the ball in plastic wrap, hide in the refrigerator for 1.5-2 hours.
