Pie with meat

Cooking a pie with meat in the oven on the popular unleavened dough, which is often called "Swiss" on the Internet. Mixed with a mixture of vegetable oil and ice water, the flour base is light, brittle, multi-layered. And in our example, it is also impregnated with aromatic meat juice.

A pie with a generous layer of minced meat, supplemented with herbs and cheese, will appeal to meat-eaters and lovers of solid savory pastries. The product will also be appreciated by those who prefer a minimum of dough and a lot of filling.

Ingredients:

For the test:

  • vegetable oil (refined) - 80 ml;
  • ice water - 80 ml;
  • salt - ½ tsp;
  • flour - 180-200 g.

For filling:

  • minced meat (pork + beef) - 300 g;
  • onion - 1 small;
  • cheese - 150 g;
  • dill - a small bunch;
  • eggs - 2 pcs.;
  • vegetable oil (for frying) - 1-2 tbsp. spoons;
  • salt, pepper - to taste.

To lubricate the cake:

  • egg - 1 pc.;
  • sesame seeds (optional) - 1 tbsp spoon.

  1. Sift most of the flour into a working bowl (approx. 130 g). Add salt. We mix.
  2. We combine refined oil with water pre-cooled in the freezer (the liquid must be very cold - this is important). Beat the mixture with a blender or mixer until a fluffy white foam is obtained.
  3. Pour the liquid mixture into a bowl of flour and stir.
  4. Gradually add flour, knead a soft, pliable and slightly oily dough to the touch.
  5. Divide the flour mass into two parts (we make one more than the other). Roll the larger one into a round layer as thin as possible (the thickness should not exceed 2-3 mm). We pre-lay the bottom of a baking dish with a diameter of 22 cm with parchment (you don't need to lubricate it with anything, since the dough is quite oily). We transfer the rolled layer to the prepared container, tamp it along the bottom, press the board against the walls.
  6. Cooking the filling. Finely chop the onion, fry in oil until golden brown.
  7. We load the minced meat. We stand at a high temperature, stirring and breaking large lumps with a spatula. We make sure that the mass does not burn - you do not need to deeply fry the meat, it is enough to evaporate the moisture and wait for a uniform color change from red to light beige. Salt / pepper.
  8. After cooling, transfer the minced meat fried with onions into a convenient bowl. Add coarsely grated cheese and finely chopped dill. We drive in two eggs.
  9. Knead the filling components thoroughly.
  10. We distribute the cheese and meat mass over the flour base.
  11. Roll out a thin circle from the remnants of the dough, transfer it to the surface of the cake. We pinch the edges, bending the flour sides to the filling. Lightly grease the top layer of the dough with a beaten egg, if desired, sprinkle with sesame seeds as a decoration. Do not forget to cut a hole in the center for the steam to escape.
  12. We send our pie with meat to the oven preheated to 180 degrees. We bake for about 40 minutes - the dough should be noticeably browned.
  13. After cooling to a warm state, cut the finished baked goods and serve.
