  • two - three beets (it is desirable to use juicy, large vegetables);
  • onion head;
  • salt to taste;
  • olive mayonnaise.

Boil potatoes and beets, cut the herring, remove the bones from it and cut into small cubes. When the vegetables are cooked, put them to cool, and at this time, peel the onion, chop it and marinate in vinegar - this will eliminate the bitterness and make the taste softer. If you don't like the strong smell, scald the onion with boiling water.

Grate potatoes and beets on a fine grater or use a food processor. Each vegetable should be on a separate plate. Now that all the ingredients are ready, you can collect the herring salad. The combination of boiled potatoes with delicate salted herring, presented mentally, immediately causes an appetite.I offer you a new interesting way to serve the good old "potatoes with herring." The salad is very, very tasty, and, despite the familiar combination of ingredients, quite non-trivial. Take for this salad the highest quality, tastiest, richest potatoes you can find, because their taste in this dish is the main one. With boring, inexpressive potatoes, the salad will turn out to be "no."

3 medium potatoes (I used yellow "organic" Yukon Gold potatoes)

1 tsp lemon juice

ground black pepper to taste

quality olive oil to taste

half a small onion

50 ml white wine or apple cider vinegar

1 tsp Sahara

1/4 tsp salt (plus a little more to taste)

100 g herring fillet, salted or pickled

1 clove of garlic

a few sprigs of dill and/or fennel and/or parsley (I used all three herbs)


Boil the potatoes in their skins in salted water until tender (the potatoes should be soft, but not boiled.) Cool a little, peel and cut into fairly large pieces (we cut each potato into halves, and then each half into about 6 parts.) Salt, pepper, sprinkle with lemon juice and season with olive oil. It is important to do this while the potatoes are still warm. We leave for a while.


Vinegar mixed with 1/4 tsp. salt and sugar. Let the salt and sugar dissolve. We cut the onion into very thin quarter rings.


Put the onion in vinegar and leave for 30 minutes. Drain the marinade, squeeze the onion lightly.


We cut the herring into small slices, pass the garlic through a press, finely chop the greens. Combine all salad ingredients together and mix. Taste and adjust the amount of salt and olive oil.
