  • wheat flour - 250-300 g
  • orange peel - 1 tablespoon
  • thick jam - 250 g
  • icing sugar - for dusting.

Cooking method

To make the sand tubes with jam tasty, you need to use good quality butter... Allow the oil to sit at room temperature before cooking. It should soften. Add pieces of soft butter, sour cream, granulated sugar to a convenient container.

There should not be a lot of sugar in the dough, otherwise it will turn out tough.

Its deficiency will be made up by the subsequent addition of the sweet filling (jam), as well as sprinkling with powder (at the end). Some housewives prefer not to put sugar in the dough at all. Eggs are also not put in such a dough, so that after baking the flour product is more crumbly and crunchy.

Take a mixer and beat well to combine all the ingredients.

Some housewives replace butter with lard (fat melted from lard). Indeed, on lard rolls with jam are especially soft, tender and crumbly. You just need to take into account that the lard should be fresh, without foreign smell and taste. For flavoring, you can add grated citrus zest, dried ground cardamom, almond flavor to the dough. And here .

The flour may take a little more or less. It all depends on its quality. Sift wheat flour to the butter mixture. Sprinkle in the zest of an orange or lemon. You can use vanilla sugar or vanillin instead of the zest.

Knead a soft dough. You don't need to knead the dough for a long time.

Divide the dough bun into two halves so that, as a result, it is convenient to work. Wrap in plastic wrap or plastic bag and refrigerate for 60 minutes. If you want to speed up the process, put it in the freezer for 20-30 minutes.

If desired, shortbread dough can be prepared in advance for future use and stored for several weeks in the freezer, and then used as needed. From the dough according to this recipe, you can bake and nuts in an electric waffle iron.

Lightly dust the board with flour. Take out one half of the dough, place it on the board. Roll into a rectangular bed. It is not necessary to roll very thinly, a thickness of 5-7 mm is enough.

Cut into strips 7 cm wide. One half makes three stripes.

Add a small amount of jam on one edge along the long side. It is better to take jam very thick homemade or purchased in briquettes.

For baking, you can use jam or thick homemade jam made from any fruit or berries. The main thing is that the jam is thick and does not spread during the formation of baked goods and heat treatment. Leaked jam usually burns on a baking sheet.

Carefully roll the dough into a roll.

Cut the roll across into small sticks, 5-6 cm long.

The liver can give not only the shape of a roll, but also mold it in the form of an envelope. To do this, roll out a layer of dough, cut it into squares, about 5x5 or 6x6 cm in size. Put a little jam in the center of each square (a teaspoon with a slide). Then lift the edges of the squares to the center and connect them. Depending on your desire, you can connect all the corners of the squares in the center, or just two opposite corners.

Cover the baking sheet with parchment. Lay the workpieces down. Send to preheated oven. Bake for 20-30 minutes at 190-200 degrees. Focus on your oven.

Remove the baked goods from the oven, cool slightly and sprinkle with powdered sugar. The dessert does not need additional decoration, cookies in the form of rolls stuffed with jam already look amazingly appetizing. Invite everyone to the sweet table.

Enjoy your tea!

Note to the hostess

  1. For baking, apple or plum jam is most often used. You can easily prepare it at home. For apple jam, take 1 kg of apples (you can use overripe, non-standard, slightly crumpled and fallen from the tree) and 800 g of sugar. If the apples are very sour, then increase the amount of sugar by 200 g. Wash and peel the apples and peels. Chop them as small as possible and cover with sugar. Cook all together for 10 minutes (remembering to stir), then turn off the heat and leave the apple-sugar mixture overnight (6-7 hours). Then cook the jam again for 10-15 minutes. Leave it on again for a few hours. In total, the procedure must be repeated 3 times. After cooling, the jam is ready to use. Similarly, you can cook apricot, plum, or any other fruit jam. If the fruits (berries) are very juicy, I recommend adding a special thickener (agar-agar, confiture).
  2. When rolling out the shortcrust pastry, it should not be very hot in the room, otherwise the fat in the dough will melt and it will become too soft. If the air temperature exceeds 24 degrees, we recommend rolling out the dough using a glass bottle with ice water so that it cools during use.
  3. How to thicken ready-made liquid jam for baking without boiling it? In this case, you can add a little potato starch or semolina to the jam (jam), which will absorb excess moisture during baking. For taste, you can also add chopped nuts, coconut to the jam.
  4. The dough recipe suggested in the recipe can also be used to bake snack tartlets. The only difference is that you do not need to put sugar in the dough (you can put a pinch of salt), and also exclude the zest of orange (lemon) and vanilla. After baking, fill such tartlets with liver pate, filling with salted cottage cheese, feta cheese, grated cheese, chopped fried mushrooms and onions.
