As breakfast, we often serve various sandwiches, scrambled eggs, scrambled eggs to the table, forgetting that all these dishes cannot be classified as healthy food, although it is very nutritious, giving energy to a person for the whole day. Breakfasts should not only be hearty, they should also be healthy. One of the options for such a breakfast is cottage cheese pancakes. In this article, we will present you with a classic recipe for their preparation.

The history of the emergence of cheesecakes with cottage cheese

Have you ever thought about why curd cakes based on cottage cheese are not called “curds”, for example. The fact is that cottage cheese is a product that is prepared on the basis of raw milk, which, when sour, turns into a cheese mass. It is she who is used to prepare various dishes, especially creams and desserts. Our Slavic ancestors invented cheese cakes - pancakes, which were prepared on the basis of sour milk and flour. And their milk constantly turned sour, because there was a lot of it.

There is also another version of the origin of syrniki. One day a Roman merchant was driving home, taking milk with him. The road was long, the weather was hot. The milk turned sour, but the merchant liked it very much. When he got home, he gave his wife a drink. She saw that at the bottom of the bottle, in which there was milk, there was a sediment, she decided to mix it with flour and cook something like pancakes. This is how the cheese cakes turned out.

How to make cottage cheese pancakes using classical technology

Ingredients that will be needed to make curd cheese pancakes:

  • 500 g of cottage cheese of any fat content (you can use both homemade and packaged);
  • 1/2 cup granulated sugar;
  • 3 tbsp flour;
  • 2 eggs;
  • 50 ml of sunflower oil;
  • 50 g vanilla;
  • a pinch of salt.

The process of making curd cakes from curd mass or cottage cheese:

  1. Pour the cottage cheese into a wide plate, mash it with a fork and mix with sugar and salt.
  2. Once you have a smooth, lump-free mass, add the eggs.
  3. After mixing everything, pour flour into the curd dough. You should have a thick dough, not a thin one, otherwise your cheesecakes will not be fluffy. Therefore, keep in mind that if the cottage cheese is very watery, then you may need a little more flour.
  4. Finally, add vanilla sugar to the dough, then wrap it with cling film and set aside for 10 minutes.
  5. Pour some flour into a separate container, which you will use as breading.
  6. Moisten your hands in water and form the curd dough into balls to be rolled in flour.
  7. Heat a non-stick skillet with some vegetable oil.
  8. Place the curd cakes in a skillet and fry them on each side until golden brown.
  9. Remove the cooked pancakes from the pan and place them on a paper towel to drain off excess oil.
  10. Prepare a plate for serving, put cheese cakes on it, which can be decorated with berries, mint, powdered sugar, honey, condensed milk or berry jam. All these additional ingredients will only complement the taste of cheese cakes and their extraordinary aroma.
