The dough should be cut in a cool room at an air temperature not exceeding 20 ° C. At a higher temperature, the dough must be cooled from time to time, making sure that the butter does not harden, otherwise it will tear the dough layers during rolling and leak out during baking.

Easy Mushroom Pie Dough


A simple mushroom pie dough can be prepared like a yeast-free dough, which reduces the cooking time.

  • 600-700 g flour,
  • 30 g fresh yeast
  • 1 egg
  • 70-80 g butter or margarine,
  • 250 ml milk or water
  • 100 g sugar
  • 1/3 tsp salt

Add yeast to warm milk or water, stir until completely dissolved.

So, with fresh mushrooms it’s understandable, but how to cook if there are salted mushrooms? The essence of the recipes does not change - choose any of the above. Here we just need to add one more thing.

Salted (pickled) mushrooms should be pre-rinsed and infused in clean cool water. They filled it with water, insisted for 15-30 minutes, washed it again - that's it, you can process it further and put it in the pie.

The point here is to remove excess salt and acid from the mushrooms.

  • Firstly, any mushrooms must first undergo heat treatment (boiling, stewing, frying). This is especially important when fresh forest mushrooms are used.
  • Mushroom filling does not have to be fried in one oil. Someone puts here a spoonful of mustard, a little cream, mayonnaise, tomato paste, sour cream. In general, add any favorite sauces, it will greatly diversify the taste of baking.
