  • flour – 470 g;
  • eggs – 6 pcs.;
  • – 530 g;
  • sugar – 540 g;
  • apples – 4 pcs.;
  • butter – 310 g;
  • baking powder – 5 g;
  • a pinch of vanillin.

Preparation

Before making a king pie from cottage cheese, prepare the basic ingredients: separate the eggs into whites and yolks, wipe the cottage cheese, peel the apples and divide into thin slices, and finely chop the butter.

For the dough, beat the pieces of butter with sugar (200 g), add three egg yolks and repeat beating. Next, add the flour and baking powder and knead the dough by hand until the crumbs come together. Set the dough ball aside in the refrigerator while you prepare the remaining ingredients.

Beat the remaining egg yolks with cottage cheese and sugar.

Now the last component of the dish is the meringue, for which it remains to beat the remaining whites with sugar until an elastic and stable foam forms.

Roll out the dough into a disc and line the selected pan with it. We prick a layer of dough and cover it with cottage cheese. We distribute apples on top of the curd layer and cover everything with a layer of meringue.

Let's start the process

  1. First of all, prepare the dough. Melt the butter, add the egg, sour cream, granulated sugar and salt. Mix thoroughly and add flour and baking powder. Then knead the dough.
  2. Let's make the filling. Cut the apples into thin slices and add granulated sugar. Then add butter and simmer for about 7-10 minutes. At the end of this process, add cinnamon.
  3. Let's fill. Beat eggs, add sour cream, granulated sugar, flour and vanilla. Mix everything thoroughly.
  4. Let's start with the sprinkles. Mix soft butter with your hands with granulated sugar, flour and baking powder. Let's make a crumb out of it all.
  5. Take a springform pan and place the dough on it. We make the bottom and sides. Then lay out the filling, pour in the filling, and sprinkle with crumbs on top.
  6. Preheat the oven to 180 degrees and place the prepared food there for 50-55 minutes. If your top browns quickly, cover it with foil.

  1. Melt the butter, combine with granulated sugar.
  2. Add flour, a portion of baking powder. Instead of baking powder, use soda slaked with vinegar.
  3. Using your hands, rub the dough into crumbs.

Baking a pie

  1. Grease the baking dish with oil, working well around the edges.
  2. Place the filling and distribute the spiced apples evenly across the bottom.
  3. Pour in the creamy filling, lay out the dough, sprinkle with crispy shortbread crumbs.

  • flour – 380-390 gr.;
  • baking powder – 13 gr.

Useful information! We measure without weighing: one faceted glass contains 200 g of granulated sugar, 130 g of flour.

Preparation:

  • Let's start preparing the dough. To do this, mix the dry ingredients: baking powder, salt and flour. Combine butter with sugar (half the norm), mix thoroughly. Add the dry mixture in parts, mix with a fork or hands. The dough will be in the form of grains (crumbs). An indicator of sufficient flour is that the crumbs should stick to your hands.
  • Grease the container with oil and lay out the dough, compact it with your hands. Carefully make a border around the perimeter of the mold.

  • salt;
  • vanillin – 2 gr.

Preparation:

  • At the first stage, we will prepare the dough. Grind a third of the sugar with the butter. Separate 3 yolks, add to the butter mixture, add a pinch of salt, add half the vanillin, mix. Mix baking powder with flour and pour in parts into the butter mixture. Knead. Place in the cold for half an hour.
  • In a container, mix cottage cheese, yolks, a third of the sugar, the remaining vanillin, beat thoroughly until smooth.
  • Peel the apples and cut them into thin slices. If desired, sprinkle with lemon juice.
  • Grease the prepared container with sides, place the dough in it, and form the sides from the dough. Pour the curd mixture onto the dough. Lay out the chopped apples.
  • The pie goes into the oven for half an hour at a temperature of 180 o.
  • While the pie is baking, use the remaining six egg whites and sugar to beat the egg whites until stiff.
  • Place the resulting mixture onto the finished pie and distribute evenly. Bake for another 10 minutes until golden.

Let the cake cool, beautiful holes will appear on the top layer, and it will acquire a porous structure.

What could be better than aromatic pastries at any time of the year, but especially with berries, when nature spoils you with such abundance. During the year, you can use frozen berries, but fresh ones add a special flavor to a pleasant evening tea party. You can take any berries, raspberries, strawberries, blueberries, currants, etc.

The following set of products is required:

  • eggs – 4 pcs.;
  • baking powder – 12 g;
  • flour – 330 gr.;
  • pudding mixture (starch) – a couple of spoons;
  • sugar – 230 gr.;
  • butter – 110 gr.;
  • cottage cheese – 140 gr.;
  • sour cream – 170 ml;
  • vanillin;
  • salt;
  • berries -370-390 gr.

Preparation:

  • Separate the whites from the yolks and place the whites in the refrigerator for a while.
  • Mix the yolks with a third of the sugar and butter. Mix thoroughly. Add baking powder, salt (a pinch) and adding flour in parts, knead the dough. It should be uniform. Place the dough in the cold for half an hour.
  • Grease a container with sides, place the dough in it, and form neat sides. Bake for a quarter of an hour at 180 o.
  • To prepare the filling, beat sour cream and cottage cheese with a third of the sugar, add the pudding mixture and vanilla.
  • Remove the cake from the oven. Place the berries and pour the sour cream mixture over them. Bake for another quarter of an hour.
  • Beat the whites with the remaining sugar until thick. The resulting mass can be evenly distributed over the thickened filling. You can use a syringe (pastry syringe) and decorate the pie with the protein mixture.
  • Bake for a quarter of an hour, reduce the temperature to 140-150 o so that the white does not darken.

Important! Do not open the oven. The whites will begin to rise at temperature. When a stream of cold air enters, they will settle.

This pie will not leave chocolate lovers indifferent. The chic look of dark chocolate dough and white filling looks truly royal. Necessary:

  • flour – 370 g;
  • sugar – 340 g;
  • cocoa – 125 g;
  • cottage cheese – 460 g;
  • egg – 3 pcs.;
  • baking powder – 7 g;
  • sour cream – 120 g;
  • butter – 190 g;
  • salt;
  • vanillin.

Preparation:

  • To prepare the dough that will serve as the base of the pie, you need to mix butter and half the sugar. Add a pinch of salt. Grind. Separately mix the bulk ingredients: flour, cocoa and baking powder. Adding in parts, knead the dough.

  • Mix the cooled butter with half the sugar, baking powder, and add a pinch of salt. Mix. Add flour in parts and knead tightly. It will turn out like small crumbs. Place in a pre-greased pan. Leave a little for sprinkling. Carefully form the sides.
  • To prepare the filling: in a separate container, beat the cottage cheese, remaining sugar, eggs and vanilla. If desired, you can add raisins or dried apricots. Pour the resulting mixture onto the dough. Sprinkle the remaining crumbs and coconut on top.
  • Place in the oven and bake at 180° for about half an hour. The top should be browned.

It’s difficult to say where this “royal” name for this pastry came from, but despite the simplicity of the ingredients, the taste of the pie turns out to be truly luxurious and worthy of the menu of kings.

And in order for the king pie with cottage cheese and apples to become truly royal, you need to take the choice of ingredients seriously, even though they are simple.

It is important to use very dry cottage cheese to prepare the filling, because after mixing it with yolks and sugar, the curd filling will become runny, because sugar dissolves and turns into syrup. Therefore, if your cottage cheese is not dry enough, transfer it to a sieve lined with several layers of gauze and put it in the refrigerator for several hours to drain excess whey.

It is advisable to take hard apples, for example the Simirenko or Granny Smith varieties; the aromatic Antonovka is also good.

The butter must be removed from the refrigerator in advance so that it becomes soft.

Separate the yolks from the whites.

Immediately mix a pinch of vanillin (or an amount to taste) with sugar so that there is a vanilla note in each layer of the pie. Sift the flour with baking powder and a pinch of salt.

This amount of ingredients is enough for one large pie (shape - 25x35 cm), or you can do as I did - bake two small pies. It is advisable to use glass or non-stick pans. They need to be greased with a small amount of oil (vegetable oil is possible); there is no need to cover them with paper.

Let's start by preparing the dough. To do this, put soft butter in a suitable bowl, add 100 grams of sugar and 3 yolks.

Beat everything with a mixer until a fluffy and homogeneous mass is obtained.

Add the flour mixture and knead into a soft dough with your hands. In order for the dough to become crumbly after baking, it does not need to be kneaded for a long time; it is enough for all the components of the dough to come together.

The dough is very pleasant and almost does not stick to your hands, however, it needs to rest a little, so we wrap it in cling film and put it in the refrigerator while we make the curd and apple filling.

For the filling, rub dry cottage cheese through a sieve, add 100 grams of sugar and 3 yolks. Mix everything with a spoon until smooth, and you will see that the cottage cheese has become much thinner.

Peel the apples, remove the seed capsule and cut into half rings.

Preheat the oven to a temperature of 180-190 degrees. Take the dough out of the refrigerator and spread it over the pan with your hands, forming sides. Let's make the sides higher, because there is a lot of filling. To prevent the dough from becoming wet from the curd filling, take 1-2 teaspoons of egg white (not yet whipped) and spread it over the surface of the dough with a brush.

Then put the curd filling on the dough, filling the dough halfway.

Start beating the egg whites at low mixer speed until foamy.

Then increase the speed of the mixer and gradually add the remaining sugar (200 grams). Beat the whites with sugar until glossy and fluffy and stiff peaks form.

After 30 minutes, we take the pan out of the oven and see that the apples and the edges of the dough have noticeably browned.

Place the whipped whites on the hot pie, quickly spread them with a spoon and return the pie pan to the oven for another 10-15 minutes.

Finish baking the pie at the same temperature (180-190 degrees). The meringue should brown a little but remain soft.

Remove the cake from the oven and let it cool completely in the pan.

After cooling, the king pie with cottage cheese and apples can be cut into portions. By the way, charming caramel-colored droplets like pearls will appear on the surface of the meringue.
