Over the years, I never fell in love with okroshka and until recently did not cook it at all, until I was advised to try cooking okroshka with mayonnaise. The recipe did not inspire any confidence in me, and I hated this dish since childhood, but nevertheless I decided to try to cook it. I cooked and I liked this okroshka, since then I have cooked it the only way.

To prepare okroshka in mayonnaise you will need:

  • 3 pieces
  • boiled meat or sausage 300 grams
  • cucumber 3 pieces
  • eggs 4 pieces
  • green onion bunch
  • greens
  • mayonnaise 150-200 grams
  • lemon 1 piece

Boil potatoes in their skins, peel. I didn't cook the potatoes as usual, but just baked them in the microwave very quickly for 10-15 minutes. The potatoes are ready. Boil the eggs hard-boiled so that the eggs do not burst during cooking, put them in boiling water, and cook for 10 minutes, and then place in cold water. Okroshka can be cooked with both meat and sausage. I had a sausage this time. Peel the boiled potatoes and cut into small cubes. Cut the eggs into small pieces. Cut the cucumbers into small cubes. Grind the greens as well.

Put all chopped food in a saucepan and mix. Add mayonnaise to them and stir so that the mayonnaise is evenly distributed over all products. Then pour a small amount of chilled water into okroshka and stir until the mayonnaise is completely dissolved. Add as much water to okroshka as you think is necessary to obtain the density of okroshka you need. Add the juice of half a lemon to okroshka, try if it seems to you that there is not enough acid, then add more lemon juice.

Okroshka is a cold first course with many cooking options. One of the popular options is okroshka with water and mayonnaise. To make the dish tasty, you need to properly prepare the dressing. To bring to the desired taste, vinegar, citric acid, spices are used. The dish turns out to be very spicy and original.

The solid base of okroshka can be any. Can be used with boiled potatoes, boiled eggs, cucumbers, radishes and lots of greens. And you can diversify the composition of the ingredients. Some housewives add green peas, boiled carrots, grated radish and other vegetables to okroshka.

Okroshka can be made vegetarian or with the addition of meat. In the latter case, any boiled or boiled-smoked meat is used, as long as it is not fatty. You can use boiled or baked chicken.

The classic recipe for okroshka on water with mayonnaise

The traditional version of okroshka can be cooked in water with the addition of mayonnaise.

  • 300 gr. boiled sausage;
  • 4 potatoes;
  • 4 eggs;
  • 3 cucumbers;
  • 200 gr. mayonnaise "Provencal";
  • 1.5-2 liters of water;
  • 0.5 lemon;
  • greens, salt to taste.

Cook the peeled potatoes in advance until cooked, cool and peel. Boil the eggs separately, put them in cold water so that they are easier to clean and cool down faster. We wash the cucumbers, if necessary, cut off the peel with a thin layer.

Cut the sausage, eggs, potatoes and cucumbers into small cubes of approximately the same size. Finely chop the greens, mix the greens with the bulk.

Put mayonnaise in a saucepan and mix in the most thorough way. Then gradually add water, bringing the soup to the desired thickness. Now add salt and mix. Pour in a little lemon juice, focusing on your taste.

Okroshka with citric acid

Instead of sausage, many housewives prefer to use boiled meat. The best option is lean beef or veal. We will cook this version of okroshka with citric acid.

  • 3 potatoes;
  • 200 gr. mayonnaise;
  • 1.5 liters of water;
  • 300 gr. pre-cooked and cooled beef;
  • 4 eggs;
  • 3 cucumbers;
  • 1 small bunch of dill and parsley;
  • salt, citric acid to taste.

First of all, you need to prepare the meat. If it is beef, then it needs to be cooked for about 1.5 hours, and then also cooled. It is recommended to cook the meat in one piece, it should be dipped in boiling water, and salt and spices should be added at the end of cooking. With this method of cooking, the beef will be the most juicy. Separately boil peeled potatoes and chicken eggs.

We completely cool all cooked products. Peel the potatoes and eggs. Cut the beef, potatoes and eggs into small cubes. We do the same with fresh cucumbers. Chop the greens very finely. We mix everything.

Add mayonnaise, mix it thoroughly with okroshka components, as if making a salad. Then, little by little, add water until okroshka becomes sufficiently liquid. Salt our cold soup and season it with citric acid to taste.

Advice! If you add citric acid to okroshka in a dry form, it is very easy to overdo it and the dish will turn out sour. Therefore, it is better to dilute a little acid in water and add this acidic solution to okroshka to taste.

Chicken and sour cream recipe

This version of okroshka is prepared with chicken, and we will make the filling with sour cream and mayonnaise.

  • 1 chicken fillet;
  • 5 eggs;
  • 3 cucumbers;
  • 3 potatoes;
  • 4 tablespoons sour cream;
  • 4 tablespoons of mayonnaise;
  • 1 tablespoon mustard
  • greens, salt to taste;
  • cold purified water.

First you need to prepare the ingredients that are used in a boiled form. Cook the chicken fillet or bake it in the oven until tender. Boil potatoes in a peel and boil hard-boiled eggs. Let the products cool completely. Then we clean up.

Finely chop the potatoes and chicken fillet. Separate the egg whites and chop them finely. Peel the cucumbers and cut into cubes with a side length of no more than 0.5 cm. Cut the greens. We mix all the ingredients of the thick part of our okroshka.

Preparing the dressing: mix sour cream and mayonnaise in a bowl, add crumbled yolks and mustard. And we rub all this in the most thorough way. Pour the prepared dressing into okroshka and mix well. Then, little by little, pour the water until the okroshka acquires the desired density. Add salt to okroshka. If desired, you can add a little citric acid or lemon juice.

Sausage okroshka with mayonnaise and vinegar

Often, we, hostesses, in our desire to treat our family with something interesting every time, forget that everything ingenious is simple. For example, if you take a well-known and beloved okroshka recipe with mayonnaise and slightly modify it, it will turn out to be quite original, and most importantly - delicious. Whatever we put in the cold soup, it will remain refreshing and appetizing - just have time to add the additive and make sure that everyone has enough!

  1. You should start by boiling potatoes in shells. Another option for bringing it to the desired condition is baking in the oven (in foil) or in the microwave. We peel the finished tubers and cut them into cubes of arbitrary diameter.
  2. The next step is to wash the vegetables. It is not necessary to dry them, because we still make the dish in water.
  3. We carefully peel the eggs, and then cut them finely and finely.
  4. Next, grind the cucumbers. By the way, if the skin on them is too hard or bitter, it must be cut off.
  5. Of course, we cut both greens and meat, having previously boiled it.
  6. We put all the ingredients in a common container, fill with mayonnaise and mix everything well.
  7. Pour the resulting "salad" lightly with cold water, so as only to cover it.
  8. We chat everything until the mayonnaise lumps are completely dissolved. After that, pour out the rest of the water.
  9. It remains to acidify our okroshka in water with mayonnaise, so that its taste becomes truly rich and rich. For this we need lemon juice.
  10. We salt our signature dish - and refrigerate for at least half an hour.

Before serving, you can put a pinch of crushed young garlic in each plate. It has a spicy and at the same time very mild taste - just what you need!

Okroshka on vinegar with mayonnaise is especially tasty when chilled. Therefore, before serving it, you need to hold it in the refrigerator for half an hour.

And finally, we offer a rather unusual recipe for how else you can cook okroshka in mayonnaise. Non-alcoholic beer and shrimp meat will add a touch of madness to it, and it will be appreciated.

  • Boiled shrimp - 50 g;

Put a few spoons of okroshka in a bowl. Add some mayonnaise of any fat content.

Pour water into a bowl - mineral water without gas or ordinary boiled. Stir. Okroshka with mayonnaise and water is ready.

If you want okroshka to be completely chilled, you can throw an ice cube into the bowl.

Mayonnaise can be seasoned with salt and your favorite spices. Pour all the chopped vegetables, sausage and herbs into a saucepan with cooled 1.5 liters of boiled water, add lemon juice and a mixture of mayonnaise with water. Stir the soup thoroughly, add salt and spices to taste. Serve cold.
