How to make sour cream dough for pies

The dough for pies on sour cream is prepared without yeast, so it is quite simple and fast - 10-15 minutes for kneading and half an hour for rest. Well suited for ever busy and hurried hostesses who do not have time to mess with yeast dough.

Start work by sifting flour. This must be taken as a rule and must be done. The sifting process not only helps to get rid of small specks, but also saturates the flour with oxygen, due to which the finished baking is more airy and tender.

In the center of the flour slide, form a small depression and transfer the sour cream into it.

Melt the butter in a water bath or microwave, and pour into a bowl with flour.

Stir everything until the consistency of large crumbs.

Now add the eggs, salt, and knead the dough. First knead in a bowl with a spoon or spatula, then transfer the mass to the work surface and knead further by hand.

If necessary, add flour, but do not hammer the dough too much, it should turn out not sticky to your hands and soft.

Transfer the dough back to the bowl, cover with a kitchen towel or cling film, and leave to rest for half an hour.

After 30 minutes, you can form pies. Turn the dough out onto a lightly floured work surface and roll out into a sheet at least 5 mm thick.

Cut into round pieces using a mug or saucer (depending on the desired size of the pies).

Put the filling in the center of each circle and firmly pinch the edges. Pies on sour cream are baked in the oven very quickly. Place them on a baking sheet and send them to an oven preheated to 180 degrees for 10-15 minutes.

Fried pies made from sour cream dough are very tasty. They must be fried on both sides until golden brown in a pan with well-heated vegetable oil. Before removing them from the pan and placing them in a bowl, line them with parchment paper or paper towels to drain excess oil from frying.

Cooking Tips

  • If you decide to bake more pies for the whole family, and there is not enough sour cream, you can add kefir to the dough. In this case, you will have to increase the amount of flour, the finished baking will be just as excellent.
  • In the case when you want to bake pies with a sweet filling (cottage cheese, berries, fruits), add granulated sugar to the dough.
  • Flour should always be introduced into the dough gradually. The consistency of liquid ingredients may differ (thinner or thicker), and the quality of the flour itself can be different, so adjust its amount already during the kneading.
  • Pies made from such dough retain freshness for a long time. If you haven’t eaten the entire cooked batch in 1-2 days, then heat them in a pan with creamy (or odorless vegetable) oil under the lid on each side for 1 minute (over low heat). They will be as if from the heat of the heat!
