A simple recipe for a pie with fresh berries (strawberries)

If you have no desire to cook pies from yeast or puff pastry, then we suggest using the shortcrust pastry. As a rule, such desserts are formed very easily, and baked quite quickly.

So how do you make a delicious and easy pie with fresh berries? To prepare such a treat at home, you should take care of the following set of components in advance:

  • dry cottage cheese 5% fat - 200 g;
  • fat cream - about 100 ml;
  • fresh large strawberries - 400 g;
  • chicken eggs - 2 pcs.;
  • margarine of expensive quality - 210 g;
  • small beet sugar - 250 g;
  • sifted white flour - 4 cups;
  • baking powder for dough - 5 g;
  • fragrant vanillin - 5 g.

How to cook a pie with fresh berries? First you need to make the basis for the dessert. To do this, expensive and high-quality margarine is taken out of the refrigerator and completely softened. Next, snow-white flour is added to the mixture and the components are ground into fine crumbs. After that, vanillin and baking powder are poured into them, and then thoroughly mixed and divided into 2 parts: 2/3 and 1/3.

Filling preparation

A pie with fresh berries will turn out much more tender and tastier if you use not only strawberries for its filling, but also dairy components such as cream and cottage cheese.

The last two ingredients are thoroughly beaten with a blender, gradually adding chicken eggs and fine sugar to them. After obtaining a lush and homogeneous mass, they begin to process fresh strawberries. It is cleaned from the stalks, and then thoroughly washed and cut in half (if the berry is too large, then it can be quartered).

How is a pie with fresh berries formed? First you need to take a deep form and grease it with any cooking oil. Next, you need to put 2/3 of the loose dough into the dishes and tamp it well with a spoon.

As soon as you have the base for the pie, it is covered with halves or quarters of berries, and then filled with a sweet egg-curd filling. From above, the whole product is again sprinkled with margarine crumbs and immediately proceed to heat treatment.

How to bake A simple recipe requires the use of a conventional oven preheated to 200 degrees. The filled form is placed in it and kept in this form for about an hour.

  • large eggs - 3 pcs.;
  • white flour - 1.7 cups;
  • soft butter (better to use "Kremlin") - 1 pack;
  • small beet sugar - a full glass;
  • blueberries, currants, raspberries, blackberries, strawberries - 50 g each.

Making shortbread dough

For kneading, we need very soft cooking oil. As practice shows, such a pie is best obtained using Kremlin butter. It is laid out in a deep bowl, and then egg yolks, baking powder and snow-white flour are added.

Knead all the ingredients with your hands until you have a homogeneous and elastic dough. In order for it to lend itself well to modeling, it must be wrapped with cling film and left in the refrigerator for 20-25 minutes.

Filling preparation

For the filling of the shortbread pie, we decided to use assorted berries. Blueberries, currants, raspberries, blackberries and strawberries are thoroughly washed and then dried by placing on a waffle towel. After that, start cooking the meringue. To do this, egg whites are laid out in a deep bowl of a blender, covered with sugar (1/2 cup) and beaten vigorously until persistent peaks form.

After the dough and filling are prepared, you should begin to form the dessert. To do this, the chilled base is laid out in a deep form and crushed with a fist until a not very thick layer with high sides is formed. Next, a berry platter is placed on the dough, which is immediately sprinkled with the remnants of granulated sugar. Lastly, they are covered with sweet whipped squirrels, forming a beautiful and fluffy hat.

Having formed a cake, and covering it with whipped proteins, the product is immediately sent to a preheated oven. Maintaining a temperature of 200 degrees, the berry dessert is baked for 35-42 minutes. During this short period of time, the cake should be completely cooked, become crumbly and very tender. In this case, the meringue should grab well and brown a little.
