That week I finally realized one of my dreams - to attend a master class on the tea ceremony (I wanted to visit both Japanese and Chinese, but it so happened that the first was Chinese and I think, given its peculiarities, that it suits me personally more). Of course, I heard about how to brew green tea for a long time, but I seriously drew attention to this only in the winter and spring of last year while reading the Chinese epic novel "Three Kingdoms" in which the scenes of tea drinking were not so much multiple, but rather expressive. And then I first tried to brew green tea with water of about 70 degrees and infuse the brew for "three breaths". And to my surprise, I really felt the difference, and so much so that for some time I strictly adhered to these brewing rules (although it is not so easy to wait until the water cools down - I have a regular electric kettle that does not allow me to choose the heating temperature), moreover, even my mother appreciated the delicate and delicate taste of properly brewed tea, but she is not a fan of special delights and may well drink yesterday's tea. Then, partial observance of the rules became a habit (I did not brew green tea with steep boiling water), but I did not show any particular scrupulousness (I could leave the brewed tea for more than half an hour, then drink it, which was digested or cooled down). And while looking through the master classes that I would like to attend, I finally found a Chinese tea ceremony!

The ceremony was conducted by a very pleasant woman, a close friend and I were together, i.e. it was a chamber event, and despite the fact that it was just a master class, and not the ceremony itself (not in an ethnic environment, with explanations, just as a show and story, and not the action itself), at the end I experienced an amazing a sense of calm and purification. It was unforgettable. Then we improvised at home a couple of times (without special equipment, of course, it’s difficult) - it was also nice.
At the master class itself, they learned a lot from the history of tea and about its varieties and characteristics. I was also surprised that only oolong tea is taken for the tea ceremony, and not different teas, and that there are still two different types of ceremony that differ only in the type of tableware: in China, only tea cups are used, and in Taiwan - two types of cups - high and low. It was the Taiwanese type that was shown in our master class, and, as we were told, he is more popular.

We are going to attend another master class by that teacher, dedicated to different types of tea, the specifics of choice and use. And I hope if everything works out

Strong mate has a tart taste (less bitter than green tea brewed in the same quantity) with a slight sweetish aftertaste and contains alkaloids from the xanthine group (this group includes caffeine, theobromine and theophylline).
