Liquid and dry ingredients are always mixed separately, then the liquid is poured into the dry base, everything is thoroughly, but quickly and gently mixed. It is important not to disturb the structure of the dough so that it subsequently rises easily and is lush. The longer the mass is kneaded, the more tight and rigid it will turn out in finished form.

To make ready-made muffins with ham easier to remove from the mold, it must be greased with butter and filled with dough only 2/3, otherwise the dish will rise and go beyond the edges of the mold. You need to bake them at a constant temperature without opening the oven, especially the first 10 minutes. So the dough is guaranteed to rise, will not fall off. We offer to cook the basic version of snack muffins - with cheese and boiled sausage. The highlight is the caramelized bacon slice on top. It turns out very appetizing!

Ingredients (for 12 medium sized muffins)

  • 1 cup flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 180 ml milk
  • 100 ml vegetable oil
  • 1 egg
  • 120 grams of cheese
  • 100-120 grams of boiled sausage (or 2 sausages)
  • 2 strips smoked bacon or brisket

Cooking

The essence of preparing dough for muffins is that first dry ingredients are mixed, then liquid ones, and only then they are combined with each other. At the very end, the filling is added to the dough.

So, mix flour, salt, sugar and baking powder in a deep bowl.

In another bowl, whisk together milk, butter and egg.

Pour the liquid part into the flour and mix quickly. The dough should not be smooth, so do not stir it for a long time. Make literally 10 movements with a spoon or whisk.

Cut sausage with cheese into small cubes and send them to the dough.

Stir the dough so that the filling is evenly distributed. Divide the dough between the molds, filling them almost to the top.

Cut the bacon into 12 small pieces.

Lay the bacon slices on top of the muffins, pushing them slightly into the batter. Now for a little trick: sprinkle the top of the bacon with a pinch of sugar. In the oven, this sugar will melt and help the bacon caramelize. A slightly sweet taste will contrast with the rich salt dough.
