Mannik on sour cream: how to bake fluffy crumbly pies. An airy treat for children and adults: lush mannik on sour cream Baking from sour cream and semolina

Manna recipes are numerous and varied. They can be cooked on kefir, milk, sour cream and even on water. Manniki are good for ease of preparation and availability of products.

I propose to cook mannik on sour cream without flour. There are no difficulties in preparing this manna. From just 5 simple and affordable ingredients: sour cream, semolina, eggs, sugar and soda, you can bake a gentle and soft mannik.

In a container, mix semolina, sour cream and sugar. Leave the mass for 30 minutes alone.

Whisk the eggs well.

And add them to the swollen semolina, stir.

We add soda.

Mix thoroughly.

Lubricate a mold with a diameter of 20 or 23 cm with margarine or butter, sprinkle with semolina and pour out the dough. We send it to the oven heated to 180 degrees for 30-50 minutes. Readiness is checked with a skewer. It should come out dry.

Mannik on sour cream without flour is ready.

Cool it in the form, then transfer to a dish. If desired, manna can be sprinkled with powdered sugar.

I love sweet pastries with the addition of semolina. The cake turns out crumbly, not dry, but, as it were, juicy, slightly moist. And at the same time not wet - when you try, there is no feeling that the dough is not baked. Recently I made mannik on sour cream - lush, crumbly, and if you layer it with some kind of cream and decorate, then it’s no worse than a cake, believe me! This time it didn’t come to the layer, but if you decide to experiment, then I advise you to choose sour cream - it suits your taste and soaks the cakes quickly. You can also saturate with lemon syrup, just pour while the cake is hot and leave for several hours. In general, mannas are good and just like that, with a cup of hot tea or a mug of cocoa.

Ingredients

To prepare a magnificent manna on sour cream, you will need:

  • wheat flour - 1 cup;
  • small semolina - 1 cup;
  • granulated sugar - 200 g;
  • large eggs - 2 pcs;
  • salt - a pinch;
  • baking powder - 1.5 tsp;
  • lemon zest - 1 tsp;
  • vanilla sugar - 1 sachet;
  • sour cream 10-15% fat - 200 ml.

For decoration:

  • coconut flakes;
  • jam syrup;
  • frozen or fresh berries, mint leaves.

How to cook mannik on sour cream. Recipe

For the test, I take low-fat sour cream 10 or 15%, and more often I mix both in an arbitrary proportion. It happens that two or three started cans will be collected in the refrigerator - that's when the recipe for manna on sour cream comes in handy - and the refrigerator will be cleaned, and there will be a delicious pie for tea. Pour a glass of fine semolina into a deep bowl. I send sour cream there.

I mix, knead the lumps so that all the cereal is mixed with sour cream. I cover, leave in the kitchen for 30-40 minutes.

During this time, the semolina will swell, soften. If you add dry cereal, then in the finished manna it will crunch, and the cake itself will turn out to be dry.

In another bowl, also deep and spacious, I will prepare the dough for manna. First, I break two eggs, throw in a pinch of salt, add a little sugar.

I beat with a mixer at low, then at medium speed, gradually pouring in the rest of the sugar (200 grams is a full faceted glass).

After all the sugar has been added, increase the speed to maximum, beat for two to three minutes until a fluffy creamy mass. The grains of sugar should almost disperse.

In a lush mixture, I shift the swollen semolina along with sour cream. I stir.

I mix very thoroughly, breaking up lumps. It is more convenient to use a whisk or a mixer. If you mix with a spoon, then the semolina may remain small lumps, the consistency of the dough will be different.

I sift the flour directly into the dough. Again, let me remind you: be sure to sift the flour, a magnificent mannik on sour cream will only work if all the products are prepared as needed. From stale wholemeal flour, the dough can become lumpy, the cake will not bake well.

I rub the zest from half a small lemon into the dough. If you don’t like zest, don’t add it, you can flavor mannik with cinnamon or vanilla, and other spices. I add vanilla sugar, baking powder. There is a little more baking powder in this recipe for manna on sour cream in the oven than usual due to the fact that sour cream is heavier, denser than other fermented milk products.

With a whisk, I shake the flour with the batter until smooth. By consistency, it will resemble a cream or thick semolina porridge. The dough should be homogeneous, without lumps and dry areas of flour. If light streaks remain after the whisk, as shown in the photo, the consistency is correct. If they disappear quickly - the dough is watery, add another one or two tablespoons of flour.

I line a detachable baking dish (diameter 18 cm) with parchment. I pour out the dough, level the top, scroll the form on the table so that the dough spreads to the walls and does not form a “dome” when baking.

Mannik on sour cream

For me, mannik is the taste of childhood, so I will share with you the classic recipe without flour, which I got from my mother, but I still made a couple of changes from myself 🙂

It's a versatile cake that's great without or with toppings, and can also be used as a base for a cake.
The recipe is so simple that even a child can handle it - it was as a child that I first cooked it. If you've never tried manna, be sure to fix it!

So, a step-by-step recipe for manna on sour cream:

Break three eggs into a deep bowl, add a pinch of salt, sugar and vanilla sugar, if you add it. The third egg in the photo was hidden behind sugar :)

2

Mix with a fork or whisk, there is no need to beat strongly, so I never use a mixer in this recipe. However, with a strong desire, you can beat it at a low speed 🙂

3

Now let's talk about sour cream.
You can take sour cream of any fat content that you have at hand, depending on this, the amount of semolina will change slightly.

The fatter the sour cream, the less semolina will be needed and, accordingly, the set.

Sour cream can be used not the first freshness, even if it is a little stale in the refrigerator 😉

After all, sometimes each of us probably forgets about some product, and the question arises of what to do. And here is the answer what to cook with expired sour cream.

But if you never spoil anything or you immediately throw away the spoiled product, you haven’t read this 😉

Add sour cream and mix.

Some soak semolina in sour cream or another fermented milk product, but personally I don’t see any need for this: even without these procedures, the cake turns out just fine.

4

Mix semolina with baking powder, add to the dough and mix again.

If you use soda, add it at the end: quench 1/2 teaspoon of soda, pour into the dough, mix quickly and immediately send to the oven.

5

And the most important thing: how much to add semolina? To begin with, add 200 grams (about one glass), mix and look at the consistency of the dough.

The dough should be quite thick, like a pancake. If it turned out to be liquid, then add semolina in a tablespoon, achieving the desired density.

6

Pour the finished dough into any form (I have 28cm), greased with butter and / or covered with baking paper.

Cover the form with foil, and the cake will not burn even in the most “original” oven 😉

After 30 minutes, pierce the pie in the middle with a wooden skewer or toothpick: if the skewer comes out dry, the manna is ready!
If the dough remains on the skewer, leave for another five minutes, after which we repeat the procedure.

7

I love mannik with condensed milk - I think they are perfect for each other :)
You can pour it on top or smear it inside, or you can do it this way and that.

Mannik goes well with jam and jam, any berries and some fruits, such as bananas.

Tell us in the comments, what do you like to serve mannik with?

I can’t wait to enjoy my favorite taste since childhood, so I’m going to drink tea and wish you bon appetit!

  • Preparation time: 2 minutes
  • Cooking time: 30 minutes

How to cook mannik on sour cream

The original recipe can be modified by adding fruits, berries, almonds or walnuts to the ingredients. Mannik is especially tasty with apples or cherries, as they give sweet pastries a pleasant sourness.

  1. Mix flour and semolina and set aside. The grains should swell, then they will not creak on the teeth, and the cake itself will turn out to be high, porous and lush.
  2. Whisk eggs and sugar.
  3. Sift flour. Add it along with soda to the egg mass, then introduce the swollen semolina in small portions.
  4. Add vanillin. Mix.

Cook ½ hour at 200°C. Readiness can be checked with a toothpick: when piercing the dough, it should remain dry. Cool the pie and decorate with pieces of fruit or berries.

Mannik on sour cream and butter

  • semolina - 1 tbsp.;
  • sour cream - 200 g;
  • sugar - 200 g;
  • eggs - 3 pcs.;
  • butter - 0.5 packs;

  2. Melt the butter.
  3. Beat eggs with sugar, pour in oil and mix with semolina.
  4. Add soda to flour and add to egg-semolina mixture.
  5. Mix and pour into mold. In order for the cake to easily separate from the mold after baking, it is advisable to grease it with butter and sprinkle with a little flour or breadcrumbs.

Bake ¾ hour at 180°C. Mannik can be cooked in the oven or slow cooker. Sprinkle the cake with cinnamon mixed with powdered sugar.

  • eggs - 3 pcs.;
  • sugar - 200 g;
  • sour cream - 1 tbsp.;
  • soda - 0.5 tsp

  • several bowls (deep) with a capacity of 420 ml or more;

How to choose the right ingredients

The pie will be even tastier if you pay close attention to the ingredients that make up its basis.

  • Try to choose sour cream with a high fat content - at least 20%. A more watery ingredient will make your cake too crumbly, even brittle.
  • Semolina must be fresh and of high quality - if it has been stored in an open package for a long time, it should not be used to make this pie.

Cooking sequence

  1. Pour the eggs into a deep bowl and mix them a little.

Pour semolina and lightly stir the mass, here you can use a blender.

mix until you get a homogeneous mass.

Then add sugar

and stir the dough until its grains dissolve. A food processor or hand blender is suitable for this purpose.

We spread the berries and baking soda, gently mix the ingredients into the dough.

Carefully grease the pie dish with sunflower oil.

Pour the dough into it and carefully level the surface with a spatula.

Preheat the oven to 150 degrees and bake the product for about 15-20 minutes.

How can you decorate this cake?

By itself, the product turns out to be very attractive and fragrant, so it is most likely not worth worrying about its additional design. However, if you feel like it, you can decorate your baked goods in a few simple ways to make them look even more appetizing.

  • Gently grease the surface of the cake with condensed milk (you can boil it) and place confectionery powder on it - it is sold in any store and looks like stars, hearts or other figures. Children really like these decorations, they excite the appetite very well.
  • Also, the cake can be smeared with honey or sweet syrup, and then put in the refrigerator for a couple of hours so that the decoration freezes.
  • A simple sour cream made from two parts sour cream whipped with a part of powdered sugar will also make your baked goods look just perfect.

How can you vary the standard recipe

I have never heard of a hostess who would not like to experiment with baking: we constantly add other ingredients to the classic recipe in order to more vividly express the taste of the product. Below are some of my works.

  • Finely chopped candied fruit, marmalade, crushed nuts or steamed raisins give indescribable beauty and interesting taste to any manna. Add these ingredients in small amounts (no more than a teaspoon) at the final stage of kneading the dough.
  • If you do not have berries, it does not matter - the cake can be made without any filler at all. Also, instead of berries, raisins or prunes, dried apricots and dates are perfect.
  • Many people cook delicious mannik on sour cream without adding eggs, which can be replaced with one glass of kefir. Such a product will turn out to be more crumbly and fragrant, but it will take more time to bake.
