Currently, Mexican cuisine is very common. It is valued in many European countries for its nutritional value and taste. Almost all the treats were created by ordinary peasant families, who, as you know, have always loved nutritious and satisfying food. Therefore, natural and high-calorie products are used in cooking.

One of the many colorful and famous Mexican delicacies is tortilla. It is a thin round cake made from wheat or corn flour. It is an excellent addition to vegetable or meat dishes. In its homeland, this flatbread is used for a variety of treats, such as burritos, fajitas, enchiladas, tacos, quesadillas, etc. All sorts of foods are wrapped in this tortilla, and the tortilla itself is often served as bread. Use it to hold pieces of meat and pick up sauce and salads. In this review, we’ll take a closer look at what this dish is, learn how to make a tortilla at home, consider well-known recipes for fillings and all the secrets of cooking.

Mexican tortillas with filling - secrets and tips

  • Instead of wheat flour, corn flour can be used. The flatbreads come out delicious and crispy.
  • Corn flour is light yellow in color. It is used quite little in our traditional cuisine, but the product is available in stores. Typically, corn flour is not very finely ground compared to wheat flour, it is somewhat similar to bran. But it is recommended to take more fine flour.
  • Corn flour also has lower adhesive properties than wheat flour. Therefore, it is recommended to combine it with wheat flour in a 2:1 ratio. Adding wheat flour will allow the tortillas to roll out well and the tortillas will not fall apart.
  • The flatbreads are fried only in a dry frying pan on both sides.
  • Ready flatbreads are served hot immediately after cooking.
  • Prepare a dish with vegetable, meat or fruit filling, and be sure to use pepper. That is, the filling is generously sprinkled with pepper, because... it should be spicy.
  • Uneaten cakes can be wrapped tightly in film, tightly covering the edges, and used on the second day.
  • Tortillas will keep in the refrigerator for 5 days.
  • The cooled tortillas are sprinkled with water and fried again in a frying pan without oil or in the microwave and stuffed with your favorite fillings.

Having prepared your own tortilla, you can further vary and select a variety of fillings to suit your taste.

  • Number of servings - 6 flatbreads
  • Cooking time - prep 45 minutes, cook 15 minutes, cook 60 minutes

Ingredients:

  • Corn flour - 1 tbsp.
  • Wheat flour - 0.5 tbsp.

Step-by-step preparation:

  1. Sift cornmeal into a large bowl.
  2. Add salt and stir until the mixture is smooth.
  3. Pour vegetable oil into a glass of warm water (approximately 35-40°) and shake with a fork.
  4. Pour the liquid into the flour and knead the dough.
  5. The dough may be a little runny, so add wheat flour little by little to get a soft dough.
  6. Roll the dough into a ball, cover with a napkin and leave for half an hour at room temperature. It will be approximately 350 g.
  7. Then divide the dough into 6 parts and roll each into balls.
  8. Place a dry frying pan (it’s convenient to use a pancake frying pan) on the fire and heat it up.
  9. Place a plastic wrap on the table, place a ball of dough on it, and cover it with a bag on top.
  10. Press the ball with your palm to form a flat cake, and using a rolling pin, roll it into a thin round cake about 1-1.5 mm and 15 cm in diameter.
  11. Remove the top film, turn the cake over onto your palm and remove the bottom sheet of polyethylene.
  12. Place it on a dry hot frying pan and bake for 1.5-2 minutes on each side. The edges of the tortilla may curl up slightly. But such slight swelling is allowed.

  14. Next, use your imagination and start preparing the filling, which you put on the tortilla, fold it in half, roll it up and eat.

  • Avocado, fried chicken and lettuce.
  • Boiled pork, tomatoes and nuts.
  • Roasted beef, grated cheese, garlic and spices.
  • Korean carrots, fried rabbit and greens.
  • Fried onions, cheese and tomato slices.
  • Baked pork, cheese and pineapple.
  • Fried mushrooms, green onions and fried eggplant.
  • Canned peas, boiled eggs and soft cheese.
As an example, here is a detailed recipe for preparing a simple tortilla filling.

Mexican tortilla: filled with cheese and sausage

Mexican tortillas baked from yeast-free dough can be prepared with a variety of fillings, but in our country the most popular recipes combine sausage and cheese.

Ingredients:

  • Corn tortillas - 2 pcs.
  • Soft cheese - 200 g
  • Boiled sausage - 100 g
  • Sweet pepper - 70 g
  • Tomatoes - 1 pc.
  • Greens (dill, onion, parsley) - 10 g
  • Tomato ketchup - 2 tbsp. l.
Step-by-step preparation:
  1. Cut the sausage into small cubes.
  2. Peel the sweet pepper from seeds and membranes and finely chop.
  3. Wash the tomatoes, dry with a paper towel and cut. The size of the pieces is not important. It depends on your preference.
  4. Rinse the greens, dry and finely chop.
  5. Grate the cheese on a coarse grater. Although this is also not important, because... it will eventually melt anyway.
  6. Assemble the tortilla. On one half of the flatbread, place the products in layers on top of each other in any order, the main thing is that the first and last layer is cheese. It will hold and “seal” the filling.
  7. For juiciness, pour ketchup over the filling. Approximately 1 tbsp is needed for one flatbread.
  8. Fold the tortilla in half and fry it in a dry frying pan on both sides for about 1 minute per turn.

I always keep a package of pre-made tortillas in the refrigerator. These flatbreads help me out when someone unexpectedly comes to visit and there is nothing to treat them with. Tortilla flatbreads can be used to quickly prepare an appetizing hot appetizer with any filling. For the filling you can use any boiled or smoked meat or sausage. Vegetables such as bell peppers and tomatoes are also suitable. For greens, you can use dill, parsley, green onions, and various types of lettuce. The main binding ingredient for any filling is cheese, or rather, a lot of cheese, and the rest is a matter of taste. Finely chop everything you have on hand, place in layers and seal with cheese on both sides. The snack is ready!

Ingredients

  • tortillas – 2 pcs.__NEWL__
  • smoked sausage – 65 g__NEWL__
  • cheese – 240 g__NEWL__
  • tomato ketchup – 2 tbsp. l.__NEWL__
  • parsley – 7-8 sprigs__NEWL__
  • Tabasco hot sauce – a few drops__NEWL__

Recipe:

Finely grate the cheese (240 g). Divide it into about 4 parts. Place a quarter of the cheese on half the flatbread.

Finely chop the sausage (65 g), carefully place on top of the cheese.

Separate the leaves from the branches of parsley, chop them and place it on top of the sausage. Pour over ketchup and drizzle with Tabasco hot sauce.

Cover everything with a layer of cheese.

Fold the flatbreads in half.

Fry the tortillas in a dry skillet on both sides, pressing the folded tortillas tightly against the hot surface so that the cheese inside the tortilla can melt, soak and seal the filling. Cut the finished flatbreads in half and serve hot, two halves per serving.

Mexico and Spain have dishes with the same names that don't have much in common. A Mexican tortilla is a thin flatbread filled with vegetables and meat. Spanish tortilla is a hearty main dish, the basis of which is scrambled eggs and fried potatoes with the addition of various vegetables. Let's take note of the idea, adding spicy sausages, tomatoes, herbs to potatoes and onions - it will turn out tasty and bright.

Ingredients

How to cook

  1. Peel the potato tubers. If the potato variety is high in starch, the potatoes may become overcooked, so it is better to boil them in their skins. Cool the potatoes and cut into medium-sized cubes.
  2. Peel the onion and chop it finely or into half rings. Chop 2-3 green onions.
  3. Cut the sausages (preferably smoked) into circles and then cut into cubes or sticks. What can you add besides (or instead of) spicy sausages? Whatever! The meat component of the tortilla can be anything - boiled or fried chicken, fried meat, bacon, boiled pork, sausage and sausages.
  4. Any greens will work in an omelette; use what you have in stock. Finely chop the leaves of parsley or dill, cilantro. Free a small tomato from seeds and juice. Cut the pulp as convenient for you, but not very large.
  5. In order for green peas to retain their bright, juicy color, they need to be kept in boiling water for 1 minute, then lowered into cold water, where they should be kept until cool.
  6. Now that all the vegetables are prepared, you can turn on the oven (heat to 200 degrees) and make an omelet. Break 2-3 eggs into a bowl and whisk quickly with a whisk or fork. Add some salt.
  7. Heat the oil in a frying pan suitable for baking food in the oven. Fry the potato cubes in it until browned.
  8. Transfer potatoes to a paper towel-lined plate. Add onions and sausages to the remaining oil. Fry until the onion softens.
  9. Combine fried potatoes, sausages, and onions. Season to taste with ground pepper.
  10. Pour the beaten eggs over the vegetables and sausages. Place the tomato cubes, green peas, herbs and green onions on top. Place the tortilla dish in the oven for 10-12 minutes. Bake until the top is firm or lightly browned.
  11. In Spain, tortillas are usually served as a hearty dinner - along with fresh vegetables, cold cuts and a glass of good wine.
